None of them. Bartending is a lot like doing sound for bands. A lot of people go to school to be a bartender...or to do sound, and in my experience, most of them never actually work in either field. In fact, it may actually hinder you getting a job, if you put that down on an application, as it makes you look like someone who is silly enough to think they need to pay money to learn how to bartend.

Bartending is really easy. Most people tell you how to make their drink when they order. I'd like a rum and coke. I'd like a vodka cranberry. If they ask for a Purple Mezopotamian, or something stupid, just ask them how to make it. If they don't know, they don't need to be drinking it. Half the time, it's just something they invented at their frat house and think you should magically know how to make. There are only about a half dozen drinks you probably need to know: martini, long island ice tea, bloody mary, kamikaze, white russian, tequila sunrise, etc. Google those. In any case, you could make the same drink for years and have rave reviews from customers, and someone will always come in and tell you "that's not how it's made." Revert to Plan A. Okay, how would you like me to make it. They're most likely going to tip you for your attitude, not your knowledge of drinks.

Don't go to school. Instead, just apply for jobs at places that have bartenders and try to work your way up into that position. They'll train you. Honest. Most bartending jobs worth having are going to be given out by nepotism (current employees, friends, friends of friends, etc.). There's no shortcut to that. Going to school might actually hamper the process in the eyes of those who do the hiring.
