Rum And Ginger Beer with a squeeze of lime is a great classic known as a Dark And Stormy (use Goslings Black Seal to make it a Dark N' Stormy)
A Classic Daiquiri is 4 parts rums to 2 parts lime to 1 part sugar
The Mojito as already mentioned should not be muddled and is best made with fresh lime juice as opposed to lime wedges
A Pina colada is a blended mix of Caribbean rum (Mount Gay, Appletons etc!.) Coconut milk and pineapple juice
Or if you want something more contemporary try
2parts rum
1 part cointreau
12 mint leaves
0!.5 part sugar syrup (gomme)
0!.5 part fresh lime juice
4 parts cranberry juice
