I got these 2 recipes from vegweb.com and they are soooooo good. They have hundreds of recipes. But these I personally tried already and they are very very good. I am sure you'll enjoy them too.
Finger-lickin' Vegan Chicken Salad Sandwich
Delicious for lunch or even for dinner!
Ingredients (use vegan versions):
about 1 cup vegan mayonnaise, I use Vegenaise
1/4 teaspoon Dijon mustard
1/2 lemon, juiced
2 celery stalks, small diced
2 tablespoons chopped parsley leaves
1 package seitan, I use WhiteWave
2 cloves garlic
1/4 cup roasted, salted almonds
vegan soy butter or olive oil for sautéing
salt and pepper to taste
sourdough bread
lettuce
tomato
sprouts
Directions:
Cut seitan into medium-sized chunks and sauté with two cloves of minced garlic until golden and slightly crispy.
Chop celery and parsley. Also chop almonds in food processor until very small (but make sure they don't just turn into almond dust).
Combine ingredients in a large mixing bowl and add Vegenaise, mustard, lemon juice, and salt and pepper to taste.
Toast bread and butter it. Put lettuce, sprouts, and a couple slices of tomato on bread and finish it off with a scoop or two of the chicken salad mix.
This recipe is also great to eat just straight out of the bowl or on an open-faced sandwich.
Fettucini with Chantarelle and Olive Sauce
Ingredients (use vegan versions):
5 oz uncooked fettucini pasta
5 oz chantarelle mushrooms
10 black olives, chopped
1 garlic clove, chopped
1 tablespoon margarine
1/4 cup soymilk OR vegan sour cream
parsley
salt, pepper
Directions:
Bring water to boil and start cooking your pasta according to directions. Meanwhile wash and tear (don't cut) mushrooms in smaller pieces.
In a skillet heat margarine and add garlic. After about 30 seconds add mushrooms and spices and fry them until they start to release their juices. If the liquid evaporates, the mushrooms will be rubbery. So fry them about 3 minutes, then add soymilk or vegan sour cream and chopped olives.
Your pasta should be done by now. Drain it and add to the sauce, mix in and heat for a minute or so. Serve and garnish with chopped parsley.
Serves: 2
Preparation time: 15 minutes
