Vegetarian/Vegan Stuffing/Dressing recipe?!


Question: Vegetarian/Vegan Stuffing/Dressing recipe!?
Nothing unusual like nuts, cranberries, or apples!.
I've been a vegetarian for almost a year now and mother insists I make it myself if I want it to be vegetarian!. Vegan is fine as well, actually preferable considering I'm going vegan soon!. But no tofu, soy, or such products!.
If you can include a cornbread recipe to use!. (My mother prefers recipes that call for actual cornbread)

I make up Vegan cornbread enough for a 8x8 inch pan
1 day ahead so it dries out some!.
In a fry pan, saute 1 cup each chopped onions, celery(less or more to taste) lightly salt & pepper!.
Break the cornbread up mix with veggies, adding Veggie or No Chicken Broth, just enough to moisten add with poultry seasonings & tiny amount of sage if you like it "sagey"!. Turn into a greased baking dish baked at 400 degree oven until crusty (20 minutes or so)xc
Make a basic Gravy for it!.
Melt Butter or Oil in sauce pan, stir in 2tbs!. Flour, add Carton of Veggie or No-Chicken Broth, poultry seasoning bring to a boil, turn down to simmer & thicken!. Salt & Pepper to taste!.Www@FoodAQ@Com

I'm going to try this recipie this year cos it looks super easy:

6 cups of bread
2 TBS margarine
1 onion
3 stalks of celery
2 large carrots
? tsp!. rosemary, thyme, sage, and parsley
? tsp!. salt
1 ? cups vegetable stock



Cut the bread into small pieces, like regular stuffing!. Combine rosemary, thyme, sage, parsley, and salt in a separate container!. Chop all vegetables!. Warm the margarine in a small saucepan and sauté the onion, celery, and carrots over medium heat!. (I would preheat the oven around this point, at 325) Add these veggies to the bread!. Add the herbs to the bread as well!. Drizzle the vegetable stock over the bread and veggie mixture!. Mix well!. Bake, uncovered for 20-30 minutes at 325 degrees!. ENJOY!

I made this for my non-vegetarian husband last year and he loved it!

1 lb!. whole wheat (vegan) bread (or your fave bread) in cubes
1 lb!. mushrooms, sliced
1 Large Onion
1 head celery
5-10 garlic cloves (depending on how much you love garlic)
1 tbl spoon dried sage
2 teaspoons dried thyme
1/2 cup white wine
vegetable stock (broth) -about 1/2 cup
1 egg (or egg replacer)
salt to taste

-saute veggies in wine (its a lot of veggies, so do in veggies)
-add herbs to these veggies, cook until tender (not mushy)
-mix veggies and bread cubes, egg and broth, enough to make it moist not soupy
-bake 30 min covered, 15 min uncovered (350 degree oven)Www@FoodAQ@Com
