If soybeans are green, why is tofu not?


Answers:
Tofu is made from the starch of the soy bean. After prcessing the bean and removing the husk, the final product is white.

Inside of the soybeans are white.

all flavor, aroma, and color are removed in the process of tofu

I think only the casing is green, the bean itself is white.

Because tofu is processed and the chlorophyll is removed that's why its in the bean and not tofu.

When soybeans are harvested they are not green. They are a soft, cream color. Tofu is not quite white, but is a lighter color than the bean in its mature state. I like tofu.

I thought tofu was made out of dried soybeans and they turn white when they dry.

Soybeans are definitely not white on the inside as some are saying. I have no idea why tofu is white, good question! I googled it and couldn't find anything. But edamame is definitely green throughout. Maybe after processing - boiling, pressing, etc, it turns white?

I don't know what beans you've been looking at but soy beans when harvested are a light tan color not green. And the insides are white. This is another thought to ponder...Why is poop nearly always brown when very little of the food that we consume is brown.
