Sour Cream & Onion Pie
Nut Crust:
1/2 cup finely, finely minced walnuts
a dash of salt
4 tbsp cold butter, cut into small pieces
1 1/4 cups flour (mostly white, with a little whole wheat)
approx 3-5 tbsp cold water
Place nuts, butter, salt, and flour together in a bowl. Use a pastry cutter to work the mixture until it is uniform and resembles coarse corn meal. Gradually drizzle in the cold water, and graduate from pastry butter to fork. Mix by pushing the dough into itself in the centre of the bowl. When it adheres to itself, you've added enough water. Roll out the dough and form your crust. Chill until time to fill.
Part one:
3 Tbs butter
4 cups onions, thinly sliced
3/4 tsp salt
1/2 tsp dry mustard
3 tbsp fresh lemon juice
3 tbsp unbleached white flour
3-4 tbsp water
Melt butter in a large, heavy skillet. Add onions, mustard, and lemon juice. Cook, stirring over medium heat until the onions are soft (5-8 minutes). Sprinkkle in flour. Stir constandly, and cook another 8 -10 minutes over low heat. Add water, as needed, to prevent sticking.
Part two:
3/4 cup sour cream
3/4 cup firm yogurt
1 whole egg
1 egg yolk (save the white!)
2 tsp horseradish
lots of fresh black pepper
1/3 cup (packed) grated swiss cheese or cheddar cheese
2 tbsp freshly minced parsely
Beat together part one and two, except the saved egg white, until well blended.
1/2 tsp caraway seeds
paprika
To assemble:
Brush the saved egg white on the unbaked, prepared pie shell (this keeps it exra crisp.) Combine two mixtures above. very well. Pour the filling into the crust, sprinkling the top with caraway seeds and paprika. Bake at 375 for 45 minutes.

Nice to see vegetarians have about as much respect for copyright laws as they do for other people.
Ingredients aren't copyrighted. It's nice to see that omnivores are educated and have feet in their mouth, as usual.
