Vegans only: what do you use instead of eggs in a cake?
Answers:
I have experimented with quite a few egg replacers for different types of food.. bananas, applesauce, ground flax seed and maybe a few more. What I have found to be thee best is Ener-G egg replacer. I use it in all my baked goods, French toast in the morning.. etc. It's non-expensive and pretty easy to use too.
Good luck with your cake! ; ]
~1/4 cup of applesauce, mashed banana, mashed pumpkin, or mashed potato with 1/4 teaspoon of baking soda added (otherwise the product tends to be heavy) (I would recommend using applesauce if you do not want the pumpkin or banana taste in your baked good).
~ 1/4 cup of soy yogurt
~2.5 Tablespoons of Ground Flaxseeds immersed in 3 Tablespoons of water, until slightly gelatinous
~ 1/4 cup of blended silken tofu
~ 1.5 Tablespoons of Ener-G Egg Replacer plus 2 Tabelspoons of Water
~ 1 Tablespoon of Baking Powder, 1 Teaspoon of Baking Powder, 1 Tablespoon of Flour, and 2 Tablespoons of Water
Good luck with you baking!
VEGAN! :P
you can use alot of things. some have already been listed. But this is my version of cake-
My cake:
1 1/2 cups of flour
1 cup sugar
3 tbls cocoa powder
1 tsp. baking soda
1/2 tsp salt
6 tbls. canola oil
1 tsp. vanilla
1 cup of cold water
Perheat oven to 350
Mix all dry ingredients. Stir and combine.
Add other ingredients and beat until mixed.
bake in 8 inch square pan for 30 mins.
Its easy and vegan. About as healthy as non-vegan cake though.
Ive used non-egg ingredient mayonnaise..it can be found at most health food stores and Ive used it in many baking recipes , just add a half cup of honey to increase the binding qualities..you will not taste the mayo..I'm a culinary artists as well as nutritionists and while I'm not total vegan my diet consists of 90%vegan intake...healing through food...carrot pulp makes great breads, cookies and pastries.
most vegan cookbooks tell you to use the softest tofu you can find. the silk kind. the ammount is different, though. i'd check a vegan cookbook.
Nothing. Eggs are not in vegan recipes and require no replacement. They were never necessary.
I haven't tried making a cake with this, but I find that the egg replacer of ...
1 teaspoon baking powder
1/2 teaspoon of baking soda
2 tablespoons flour
3 tablespoons water
Works really well in cookies. I have it listed as good to use in cakes as well. Mix all of those things together for one egg, simply double or triple for more eggs. The best vegan cake I have ever had though replaced egg with applesauce, but it was also an apple spice cake. I heard 1/4 cup per egg works, but you may want to look that up.
Happy cooking!
