I have to say, it's fresh fruits and vegetables. No cooking required, just a quick rinse to get the bugs/dirt off and they're ready to eat. I'm not even a vegetarian, but there is absolutely nothing better than an apple, a handful of grapes, and some carrots to fill you up.
Also, fresh tomatoes eaten plain are simply DIVINE. You can eat the regular sized ones sitting down, or you could take a sandwich baggie full of little cherry tomatoes with you pretty much anywhere.Those make a marvelous snack.

~Heat the spinach (fresh or frozen) in a pan with a bit of oil and the chopped garlic (and maybe the lemon juice).
~You can use minute rice for speed
~Add lemon pepper when done
~Total time 11 minutes
If you eat cheese, you could put some on top... of course that begins to detract from the healthiness.

Toss whole wheat pasta with Extra virgin olive oil, chopped garlic, canned diced tomatoes and sauteed peppers.
tomatoes marinated in balsamic vinegar...then put them in a pan with pam and cook them...mmmmm delicous
