sushi, but you need to keep it cool, it doesn't keep well
My husband eats meat and fish, and he loves this recipe... Veg*ns can substitute portabella mushrooms for the fish and agave nectar for the honey, which is what I do.
1lb of cod cut into large strips
1 small can chipotle peppers in adobo sauce
honey
flour tortillas
taco fixins of your choice
In a food processor or blender, blend 1/2 the can of chipotle peppers (and some of the included adobo sauce) with about the same amount of honey. Marinate the cod strips in the mixture for at least 30 min. When marinated, place the strips in a medium-hot pan and cook until fish is flaky and the marinade has been carmelized. Serve in a flour tortilla with some slices of avacado or other fixin's.
You would need to bring the fish in a separate container and assemble them while eating, but it'll be worth it. Try it the veg*an way too!
I'm a pescaterian as well. =]
When I decide to pack my lunch, I usually make a variety of things.
-Peanut butter and jelly
-Salad
-Soups (I usually eat clam chowder or some kind of bisque... but you may be able to have noodle soup with some veggies thrown in)
-Veggie sandwich (made with lettuce, tomato, mayo, pickles... whatever else I feel like)
-Lunch "meat" sandwich (buy fake meats, such as Tofurkey)
-Cold pizza
-Cold veggie burger
Your lunch can probably be the same, since I wouldn't suggest bringing fish to school.
Also include lots of fruits and veggies, and a drink.

First off, A pescetarian is no type of vegetarian. I suggest googling seafood lunch recipes.
