My boyfriend (almost 6 moths now, yay!) has been a vegitarian for about 2 years. He's skinny as a rail, and always has been. Sometimes, I worry that he gets the right nutrients each day because he lives off of cereal bars (gelitin free ones, at that), starchs, and cheese. Sometimes I make him idnners with good foods like veggies and lentils, but he don't even have time to cook. What are some super-quick meals we can make for him, that are healthy? Or, meals that you can make once, and re-heat lots of leftovres later? I worry for the poor boy, he turns sideways and he dissapears!

I'm a veggie, and at my old job I didn't have time to cook. So I would make cassaroles and salads to reheat and eat through out the week. One of my favorites was a bean and rice salad, that can be eaten hot or cold.
Brown rice (complex carbs)
Black beans (protien)
Avacodo (good fats)
Tomato
Wild onion
Olives
Balsamic vinagar
And whatever spices you want, I like adding chilli pepper for some kick. If you want it spicey, add peppers. And if you eat dairy, you can add grated cheese and sour cream.
This is so easy, and it can be personalized, and made ahead and kept in the fridge for later in the week!
Give him Soybeans, nuts, and avocadoes. They all have natural fat which is healthy and will help him gain good weight.

It doesn't sound like YOU are a vegger, so your relationship is doomed. Go find a meat-eating man and you'll be happier.
So he's not a meat eater. Hmmm...well whenever I'm hungry I always have some whole wheat pasta. Taste better than the regular kind, it's healthy, and most importantly it fills you up. Don't put on meat sauce but if you want him to gain weight, put on less tomato sauce than pasta but not like a teaspoon.

give him nutritious and tasty foods like soya,milk,green vegetables etc.,make him eat more so that he will get some skin
Morning star Farms frozen foods are the shiznit! My girlfriend of a year is a vegetarian, and she introduced me to them. I think they're really tasty, and they're really quick and competitively priced.

I know plenty of fat vegetarians. The approx 1 billion vegetarian Hindus in India aren't skinny unless they are poor. My veg boyfriend was really skinny 10 years ago but he's got a lot more meat on him now basically because he was naturally skinny when younger as he's grown older he's gotten interested in eating more food. Maybe your boyfriend just doesn't eat enough because he's not that interested in eating food?
It's really nice that you care about his health and want to feed him up. Pour lots of olive oil into those pasta sauces and make lots of fried beans, vege sausages or free range eggs on toast and stuff like Mexican food with loads of red beans and rice and avocado - yummy! Vege-mince is good to add to pasta sauces and pies and is full of protein too. Thai veg and tofu curries full of coconut cream is great. All this kind of stuff has made my boyfriend eat more and get fatter. Make it sexy and get him in the kitchen with you and cook together while sipping wine and going ga-ga over ingredients and spices :) have fun
