What are some good vegetarian recipes?
Easy recipes for breakfast and luch? No meat, cheese or fish please. Yogurt is fine though. Thanks so much!

If you just want something fast and easy, oatmeal is one of the most delicious breakfasts ever. Just get 2 packets of oatmeal and heat it up with some water (or soy milk if you want extra protein and calcium) and then mix in whatever you want!

When I used to cook for my little brother, I would often use recipies from this site. They've got a vegetarian section if you scroll down.

steam up some nice plump, squash, zucchini, celery, mushrooms, bell peppers, dice all this up into big, chunky pieces, or saute it all in butter (yum) put other veggies in thge mix...season with Mrs. Dash Tomato, Basil, and Garlic, and( if you must )slop on your yogurt !
veggie chilli.
i use beans (red and pinto), chickpeas, tomatoes, tomato paste, chilli powder, cumin powder and mix it with this stuff from boca burger (looks like ground meat). its the best chilli ever and so easy/quick to make. great as a leftover for lunch.

This is a favorite recipe in my household....
Butternut Squash Soup
I adapted this recipe from Food Network's Sara Moulton
1 medium butternut squash (about 2 1/4 pounds)
1 medium onion, chopped (about 1 cup)
1 tablespoon freshly grated ginger, optional (I don't use this)
3 tablespoons vegan margarine (like
3 cups vegan broth (I use vegan broth cubes dissolved in the amount of water I need)
3 cloves garlic - finely minced
1/4 tsp black pepper
1-2 bay leaves
1-2 cups water, as needed
Salt and pepper to taste
Cut squash in half lengthwise and scoop out seeds. Place cut side down on greased cookie sheet and bake until tender. In the meantime saute the onions and garlic in a soup pot in the margarine over medium low heat until the onion is softened. When the squash is done scoop out the flesh and put it in the pot along with the broth, salt, pepper and bay leaves and simmer for about 10 minutes. Puree the mixture in a food processor (in batches) until smooth.
You may need to reheat the mixture after the puree. My family likes the soup to be served in bread bowls.
