Are there any good substitutes for Tempeh?
I have this interesting recipe that calls for it (Hawaiian Yam bake) that I'm making for a Luau later today, but I can't find it in any local markets.

You could use a firm tofu. Tempeh and tofu are both made from soy beans, they're just processed differently. The main difference between them is that tempeh is a whole bean product (it uses the entire soy bean) and therefore has a higher nutritional value, and some additional flavor. Tofu is made by coagulating soy milk and then pressing the curd.
But for the purposes of your recipe, I think tofu will work fine, and it will absorb the flavors around it and incorporate well into the dish. Be sure to use a firm tofu, though, or you'll just get mush.

tempeh is just made out of soy nuts. that is all you really need.
