Yes, it's a fairly complicated topic to directly answer here. I'd suggest you hit your library, Abebooks.com or Amazon for a book called "The new Farm Vegetarian Cookbook" by Louise Hagler and Dorothy Bates. It'll teach you the basics of how it's done, along with a lot of other good recipes and veghead information. I'll leave links for web recipes to Mevlana!

1) Any combination of a bean and a grain have the correct balance of amino acids to be a meat analogue. (corn, wheat, barley, etc.)
2) Any combination of 3 different kinds of beans also contain the necessary amino acids.
3) Tofu is high in protein.
These are just a few of the basic ones...
