Food for a Vegetarian?

Hi! I became a Vegetarian about a month ago.
I need some good ideas for food.

It's been very easy so far. It's been easy beause i've never been a meat eater. Just every other day .. or just a few times a week. But i've decided to change my lifestyle and go completely Vegetarian and throw out any products tested on animals.

So what are some good dishes i can cook at home. I don't go out to eat very much .. i like to stay home and cook for me and my boyfriend.

the easyest way,is to cook everythig else the same way only with out the meat.

Try vegetarian burgers and things like that, my friends who don't eat meat love those type of things. Another person love quacamole < i can't even attempt to spell that

Buy the cookbook "vegetarian cooking for everyone" by Deborah Madison. It isn't terribly expensive and it is truely a resource for all things veggie.

Not only are there over a thousand great and easy to follow receipies, she has sections on every vegetable, how to stock your kitchen, and tons of really helpful tips.

I got this book as a gift over 10 years ago and though I have other cookbooks, this is the only one I actually ever use.

Early human beings used to eat meat cause he had not any option.Now there are many other foods that we use today.Moreover our digestive system does not support meat eating.The meat eating animals have shorter intestines as compared to ours. Thus we should avoid meat eating.

I don't know if you don't like the taste of meat or what so just in case you do here is a recipe for super easy Sloppy Joes I made today, I don't have exact measurements but I will give you the feel for it.

Morningstar veggie "ground beef" crumbles
1 can of tomato paste
Some ketchup and some mustard
Packet of sloppy joe seasoning+ water
A little bit of sugar or brown sugar

Heat up the "meat" in a pan on medium, add seasoning and water, stir in half the can of tomato paste, squirt in some ketchup and mustard, and add spoonful or so of the sugar just mix together until everything is warmed up.

Here is Corn and Broccoli casserole
1 can of cream corn
1 package of frozen chopped broccoli- thawed
1 egg
1 package of cornbread mix
1 cup or so of Stuffing mix ( I find the kind in a canister is best)
2 TB of melted butter

Preheat oven to 350 degrees

Stir together creamed corn, thawed broccoli, egg, 3/4 package of cornbread mix.
Pour in a baking dish and spread over the stuffing mix on top then drizzle the melted brother

Bake for 30 or so minutes

Also make sure you get enough iron and calcium to stay healthy.

Indian food is the largest vegetarian cuisine in the world. Many, many recipes are vegetarian - also the spices make it tasty.

Indians also have lentils for their protein - you may want to look into it.

I've made a vegan version of chicken and dumplings. Just cut out the chicken and use vegetables (corn, green beans, onions, carrots, etc). For the slick dumplings (similar, but more tasty than Swanson's), I used unbleached flour and palm oil shortening. Palm oil shortening is non-hydrogenated because at room temp it has a cosistency similar to regular shortening. For flavor, I used vegan broth cubes, bay leaves, salt, pepper, etc. I'd post my recipe but it is in storage right now along with the rest of the house. If I find a similar recipe, I try to post it.
