I want to slowly become vegan and I need easy, good recipes!
In your opinion, what is the best vegan cookbook? Why?

For the simple transition I think the "Garden of Vegan" and "How it All Vegan" are good. If you already know your way around the kitchen "The Accidental Vegan" is good. Try going to www.vegweb.com and print out some things that you like. It's best to stand around in the veg section of the bookstore for an hour and see what appeals to you, I have been puttering in the kitchen for years and I still need to flip through the cookbook and see what the ingredient lists and what the format is before I buy a cookbook.
They're vegetarian rather than vegan, but easily adapted: Diet for a Small Planet and Recipes for a Small Planet.
My favorite is Very Vegetarian by Jannequin Bennet and Carl Lewis. I like cookbooks with full color pictures, and this one's really been done well. The recipes range from quick and easy to gourmet, and there's also a good run through of vegan nutrition. This was my first vegan cookbook, and still my favorite.
I also really like The Shoshoni Cookbook. It has lots of Southwest and Indian inspired recipes, plus it gives the nutritional content for each one.
CalciYum! I checked this out of a library once, and was rather impressed. The recipes were mostly along the lines of comfort food, but healthy and creative at the same time.
