Answers:
Mushrooms and yeast, like plants, are living, yes, but they are not animals. They are fungi, a different kingdom. All humans must eat once-living things to survive - veg*ns do not eat animals because we know they have capacity to feel pain as we do*, many of them have demonstrated having feelings and social networks, and they have consciousness similar to ours, perhaps on a spectrum, but still significant. So there's nothing in the definition of veganism that precludes eating yeast and mushrooms - I do, personally.
A lot of vegans do avoid certain sugars and alcohols for that reason, though some have difficulty determining what is safe at that level of detail - it can be a hard lifestyle to follow perfectly, which is why we can only try our best.
*At least the ones more complex than mice or so - when it gets down to various insects and bivalves or whatnot it may get a bit more blurry, but why take chances.
My friend is vegan and she eats unproccesed sugar. She also eats mushrooms and yeast. She doesnt do the vegan thing to save the animals or anything, she does it because its a healthier life style in her opinion. As a matter of fact most people I know that don't eat meat dont do it for the animals but for their own bodies and health

Only very fanatical vegans avoid yeast. I've never met one who does. I've never heard of anyone avoiding mushrooms, unless they just don't like them. Many vegetarians and probably more vegans avoid bone-char processed sugar... but there are sugars that are not processed this way, so we just buy those.
fungus is not an animal, it is in a different kingdom than animals. it has no central nervous system.

The question is misleading in assuming that all vegans/vegetarians choose their dietary habits out of empathy for animals. Nothing could be further from fact.
I eat mostly raw/vegan because it makes me feel healthy and energetic.
Many go vegan/veg because of the politics of the meat/fishing industries. Some do it to help out the environment. Some find they don't like the way meat/dairy sits in their stomach. Some are just dieting. The list goes on...
