Question:

What is a tastey vegetarian breakfast?

Preferably with no bread.


Answers:
An omelette using morningstar sausages and cheese, plus sauteed onions, bell peppers and a little spinach.

If you don't want eggs, take mashed tofu and make a "scramble".

It's surprisingly simple... unless you're looking for a more elaborate dish.

Eat steak and eggs, you goober.

Berries and sprigs of mint with shaved almonds and heavy creme drizzled over top.

Baja California Tofu Scramble

1/4 medium onion, diced
1/4 zucchini, diced
1/4 red sweet bell pepper, diced
2-4 garlic cloves, minced
1/2 small green chili pepper, diced (optional)
1-2 teaspoon olive oil
100 g tofu
1-2 tablespoon canned spinach, chopped
1 tablespoon vegan egg replacer powder (optional)
1 tablespoon fresh cilantro
1-1 1/2 teaspoon ground cumin
1-1 1/2 teaspoon dried oregano
1-1 1/2 teaspoon paprika
1 teaspoon dried parsley
1/2 teaspoon turmeric (optional)
1-2 lime wedge
soy sauce
fresh ground black pepper
1 green onion, chopped (for garnish; optional )
1 tablespoon avocados, diced (optional )

fry the onion, zucchini, pepper, garlic and chile in olive oil at medium heat until onion is approaching translucence.

mash together tofu, spinach, egg replacer, cilantro, dried spices. add the juice from the lime wedges.

add tofu mash to the onion-veggie-garlic-chile mix and fry at slightly lower heat, till everything is hot, tender and mixed together.

Add soy sauce and black pepper as needed.
garish (or not), and serve.

Scrambled tofu-sauteed onions, tomato, spices. Grits with butter on the side is pretty good.

there are many yummy ones that i love that do not include bread (these are all vegetarian, not vegan...i eat dairy and eggs):

-vegetable omelete (your choice of mixed veggies and cheese if you like it)
-hash browns, vegetable, cheese, and egg scramble (meaning you mix all of them together)
-vegetarian heuvos (made with peppers of your choice, cheese, eggs, and salsa, wrapped in vegetarian tortillas)
- a whole grapefruit cut in half and eat out of each half (the halves are shapes like a bowl) and a mixed berry fruit salad
-cooked oatmeal (i like to make it, not really a fan of the instant oatmeal, but it's your choice!) with brown sugar added (or splenda if you don't want real sugar) and cinnamon and some strawberries on the side
-yogurt mixed with nuts/small fruit like berries and a banana on the side

Here's one we like, and the prep work can be done the night before.

Baked Omelet Pie

This baked omelet (frittata) is loaded with potatoes, onions, bell pepper, mushrooms, and tomatoes.

INGREDIENTS
1 large baking potato
6 eggs
1 teaspoon salt
1/2 teaspoon ground black pepper
1/4 cup chopped fresh parsley
2 tablespoons olive oil
1 onion, chopped
1/4 cup chopped red bell pepper
1/4 cup chopped fresh mushrooms
1 tomato, sliced
1/4 cup shredded Cheddar cheese

DIRECTIONS
Bring a medium pot of salted water to a boil. Add potato and cook until tender but still firm, about 15 minutes. Drain, cool, peel and slice.
Preheat oven to 350 degrees F (175 degrees C). Beat together eggs, salt, pepper and parsley.
In a cast iron skillet, heat olive oil over medium-high heat. Saute onion and red pepper until soft, then stir in mushrooms. When mushrooms start to shrink, add the chopped ham, potato and tomato slices. Pour in the egg mixture; gently stir to combine.
Sprinkle cheese on top of eggs and place skillet in preheated oven. Bake until eggs are firm, about 10 to 15 minutes. Allow to cool briefly before serving.

I sometimes add a jalepeno pepper, chopped for added zip.

I prefer to tear the tounges out of my vegetarians before I eat them....that way i dont hear them whine about my side dish bacon.

I really enjoy the Boca southwestern style breakfast burritos with a cup of oj. The burrito has a spicy taste becasue of the peppers. The only downside is only 2 come in a box.

Weeds, sun flower seeds and garlic

Most traditional breakfasts can easily be made vegetarian (not so much vegan though). French toast, waffles, pancakes, omelets, scrambled eggs, hashbrowns, etc. are all suitable for your typical vegetarian. Use Morningstar sausage links (better than the real deal IMO - as a former meat eater) - I like to drizzle them with a little syrup before I microwave them... YUM. Or you can cut them up & toss in your omelet. I'm not fond of the Morningstar bacon, but I did find a tempeh bacon that is quite good and fries well. Great on BLT's for lunch too!

Personally, I'm more of a cappuccino & a bagel for breakfast kind of person. :) But on weekends sometimes I do the above mentioned stuff.

Beer it's got alot of barley and malt.

i cook mashroom and tomato on a pan with little bet of spices. and toast bread. it is very wonderfull.
also i love my cereal.
