Camping vegetarian?
I am going camping this weekend and I a a vegetarian, and most campers are like meat meat meat, what could I eat? Thanks

Get some smoked seytan (tofu) it is good on a grill, bell peppers, sliced potatoes about 1cn thick put in a dish with olive oil and garlig to cover them then put on grill and keep turning till done . You,ll never eat another chip

Portabella mushroom grilled with olive oil, garlic, etc. Sprinkle on some parmesan cheese (a block keeps well with min. refrigeration) and lay it on a whole wheat bun.
It goes well with couscous or pasta.
My husban and I went on a two week camping vacation last year and he does not eat meat. Here are a few suggestions. Try Morningstar farms veggie burgers. The mushroom burger is delicious. You can also get veggie hot dogs. In an organic store like Whole Foods you may also find veggie italian sausages. I've had a sundried tomato one that is really good with some mustard and onions.
If you can take a camp stove, you can also take potatoes, mushrooms and onions and fry them together in a pan. We took a two burner camp stove and took a pan and a small pot. We also took canned vegetables, and prepackaged rice and noodle mixes. Just don't get any that require milk or butter.

this is what i always do when i go on camping trips:
bring your own cooler of food and pack all your favorite snacks (crackers, corn tortilla chips and salsa, bread/tortilla wraps to make sandwiches with, fruits, nuts, peanut butter, etc. basically anything you want) and drinks. bring a few things to throw on the grill as well, such as veggie burger patties, fresh veggies to grill, potatoes, tofu (if you like it), etc. you really don't want to leave yourself in a position where there will be nothing for you to eat, so the smartest route is to bring your own food!
What about those large mushrooms (I forget what they're called.. I don't eat them) on the grill. Put a piece of foil on the grill, throw on your mushrooms, and other veggies to put in between, and make a sandwich of them. Add a little oil to the foil if you can, or bring containers with the oil and seasonings already in... not too much oil. Simmer all on the grill. Maybe some potatoes too... you can do those on the grill. New potatoes would be nice cut up and put in with the other seasoned veggies. Or you could use any nice quality crusty bread to make a sandwich of your seasoned, grilled veggies.
Maybe vegetarians arent supposed to camp. If you have a miserable time, that might tell you something...
