Tofu: Tofu is made by coagulating soy milk and pressing the resulting curds. Although pre-made soy milk may be used, most tofu producers begin by making their own soy milk, which is produced by soaking, grinding, boiling, and straining dried (or, less commonly, fresh) soybeans.
Soy Sauce: Authentic soy sauces are fermented with kōji (the mold Aspergillus oryzae or A. sojae) and other related microorganisms. Authentic soy sauces are made from whole soybeans, but many cheaper brands are made from hydrolysed soy protein instead. These soy sauces do not have the natural color of authentic soy sauces and are typically colored with caramel coloring.

yeah hey yeah....that is a good question...
fully mature soybeans r not green & coz the color of the milk extracted from it is white &so the tofu
because it is bad for you.
It has to do with separating out different parts of the soybean, like how you get brown bread from wheat if you leave the outside cover on, but get white bread if you take it off. Since soybeans are whitish on the inside (or at least, the edamame I've eaten has been) the colour of the products from them would be predominantly white. And soy sauce generally has other things added in, which would change the colour - I don't know what colour pure soy sauce would be, but I'd imagine fermentation would change the colour to make it darker.
