Answers:
Take a Vegetarian (free range works best as they have less fat and more flavour)....

Sorry, couldn't resist that one!

In all Seriousness try to select some nice fresh and fibrous veg (carrots, Asparagus, Coli and broccoli along with an couple of red onions and a white one)... take a blender and blend to a COARSE not mushy consistency (u can use a knife but it takes a while...we are talking Fine dicing here). add salt pepper and a little cayenne (or any spice you like)Take a little breadcrumb, flour en egg white and mix it all up ...a couple of hours before cooking roll into balls onto a plate then cover with grated garlic, lemon thyme and basil. cover with foil and put in fridge.

I tend to deep fry mine in hot oil for about 15 secs to seal em before i add them to a casserole bowl and spag. bog.source.

Options are many... you could just fry em till done then serve em as a nibble cold or hot or use em like dumplings in a rich veg gravy.

I used to have to cook for a vegan.... these were my salvation!
good luck...

ps... i never consider egg white to be in breach of the rules , if any vegans out there want to lynch me.... so be it.

I am not trying to be funny here but isn't vegiterian an Oxi-Moron ??????

You can try this recipe:
Ingredients

MEATBALLS

* 1 pkg. Morningstar Grillers crumbles
* 18 oz. firm Tofu (water packed) drained and mashed
* 2 cups walnuts (chopped fine)
* 1 1/2 cups plain breadcrumbs (dried)
* 1 sm. onion (finely chopped)
* 1/4 cup oil
* 1/4 cup yeast flakes
* 1 Tbsp. Liquid Aminos
* 2 tsp McKay beef seasoning
* 1/4 tsp garlic powder
* 1/4 tsp poultry seasoning
* 1/4 tsp Hickory smoked salt
* 1/2 tsp salt or to taste
* 1/4 cup gluten flour

SAUCE

* 1/2 cup soy margerine
* 1 onion chopped
* 1 cup ketchup
* 1-2 tsp chili powder
* 2-4 Tbsp brown sugar
* 1/2 tsp liquid smoke
* salt to taste

Directions

MEATBALLS

1. Mix together well.
2. Form into small meatballs.
3. Place on oiled cookie sheet.
4. Bake at 350 degrees for 35-45 minutes, or until crispy.

SAUCE

1. Saute onion in soy margerine.
2. Add remaining ingredients, simmer 10-15 minutes.
3. Add water to thin as needed.
4. Place baked meatballs in single layer in casserole dish.
5. Cover with sauce and bake at 350 degrees for 15 minutes.

Instead of using the meatball part you can just use the vegemince instead just as you would for meat meatballs and just make the sauce.

I use Boca Veggie Burgers
I thaw them and shape into meat balls.
They turn out really good,
Then you don't have to add a lot of extras
They are already in there.
I did that yesterday when I made vegetable soup.

Boca Burgers offers a product that is ground. Like ground beef. Go for it! I'm sure whatever you do, if you try, they'll appreciate it! Good luck!

why do they have to be called meat balls if its vegetarian.. veg balls is a better name i think. sorry to be a nitpicker but its one of my little pet moans

If the mince is dried soak it.Then mush it together into a meatball shape.Either cook that way or coat in breadcrumbs (using an egg to help them stick if you want) then cook.

Now that is really stupid. Sorry luv, but there is no such thing as a vegetarian meat ball. You can make round things which you can fry and which don't have any meat in them, and you can serve a tomato sauce with them.
Try cooked lentils mixed with spices and breadcrumbs rolled into balls.
Personally, I would go for regular meat balls and plenty of veg, salads and possibly deep-fried Brie. A good salad which can be eaten by vegetarians (but not vegans) is mozzarella, tomato, cucumber, maybe hard-boiled eggs (depends on the degree of vegetarianism) shredded basil. A little paprika over the eggs, season with salt and pepper, sprinkle with lemon juice and drizzle with olive oil.
Most meat substitutes are revolting, and why be a vegetarian if you like the taste of meat?
Tofu is good, it needs to be marinaded in strong seasoning to give it some flavour - soy sauce, sesame oil, garlic, chili, but I can't think of a way of making it into 'meat' balls.
You could possibly squeeze it into balls, coat them in (vegetarian) batter and deep fry them.
