What are good quick vegetarian meals for a 15 year old?
I have been a vegetarian since Sept. of 2006, but I always have dance after school. My parents make dinner for themselves and I'm always left with frozen stuff or a PB sandwich. What are good foods that are quick, inexpensive, and healthy?

Try a stuffed baked potato, just put potato in microwave -quick and easy!
Or on weekends why don't you cook the vegetarian meals you like and freeze in individual portions and just defrost as you need.

I love having pasta with sauce (meatless, use just tomato sauce or add tofu), pigs in blankets VEGGIE STYLE (veggie dogs cut up put in crescent rolls and baked), oriental salad (lettuce, crunchy wontons, oriental dressing, cheese (if not Vegan), carrots, green onion, etc)

You could buy veggie burgers (they're frozen) you could prob. just pop them in the microwave.

Why are you a vegetarian? Nothing wrong with eating a little meat once in a while. We're carnivores. If you insist on being vegetarian, I hope you at least eat fish and eggs. For quick meals, you can buy packaged salmon and fish fillets and eat them with wheat tortillas, wheat pasta or some brown rice (which you'll have to pre-cook, since it takes about 45 min) and veggies. This takes minutes to prepare and is tasty and probably more nutritious than a PB sandwich. If you're going to eat lots of peanut butter, get natural peanut butter (if you haven't already) and eat it with apples and bananas. If you're a vegetarian for health reasons, just remember eating processed foods isn't healthier than eating fresh meat. Also remember that we are carnivores for a reason. I don't know any strict vegetarians--certainly no veegans, who look healthy. They all look gray and malnourished. Good luck.
STEAMED VEGETABLES. Cut up some fresh veggies such as broccoli, onions, zucchini, cauliflower and steam them in a medium sized pot until cooked to your taste. Add a little olive oil and seasonings to taste when done. Eat with a fresh salad, or rice. You can also first steam some carrots, potatoes until they begin to get tender, then add the other veggies. At the end, put in some spinach and or kale. Takes about 15 to 20 minutes or less. Very healthy.
Quick energy - get some organic (if possible) red leaf lettuce or butter lettuce. Make a quick salad with tomato, avocado, sprouts. If you can eat dairy, choose swiss or Hvarti (Danish) cheese for protein. Add your favorite salad dressing. For more energy, eat with a toasted whole wheat English muffin or stone ground whole wheat bread toast.
Other quick meals.
Corn tortillas with a little cheese, lettuce, tomato, salsa, onion, sprouts. Heat the corn tortilla on both sides in a pan with a little olive oil, then fold in cheese and veggies. Yummy and very quick.
Buy some fresh fruit and make a smoothie. In a blender put some mango, berries, water, juice, banana, etc. Blend and drink. Takes a couple of minutes. Experiment with fruit and amount of liquid to get the right consistency.
Drink vegetable juice for a quick energy pick-me-up. Be sure to drink lots of good water.

Veggie meals that are easy to make and fairly cheap .. great for a teen : veggie buritos or tacos with avacodo slices , veggie chili ..really easy , soups all kinds , but lentil with elbow pasta is great , veggie burger , veggie chicken , veggie dogs , rice with beans or sauteed veggies , veggie pizza (no cheese) with sauce and roasted veggies , pasta a million ways ..with beans , shells with peas, noodles (not egg ) with earths balance veggie type margerine , oil and garlic, with broccoli and sauce or prima vera , even veggie stew is easy , curried veggies and potatoes , eggplant cassarole , lots of other casseroles .. most meals you can eat one day and have left overs for lunch the next .. I make simple meals for the most part with fresh fruits and nuts a little later .. you can email me for recipes as too much too list here .. I think it is wonderul you went vegetarian ..congrats!!
I think you are missing out if you do not eat with the family whatever they are eating, meat or meatless. 15 year olds are still growing, and could use the meat anyway, or, another idea is to win your entire family over to go veggie, because they probably ought to. Or just cut back and don't ask for meat portions, and not go overboard with being pure vegetarian.
