Can I freeze garbanzo beans?!


Question:

Can I freeze garbanzo beans?

I eat a lot of them, and have found a good source of dried beans. Can they be frozen, or should I just make what I can eat in a reasonable amount of time?

Or do you think I should just stick with the canned variety?


Answers:
They get mealy (because the water in them expands as they freeze), which is OK for soups, but not so good for other things.

I do a big soak-and-simmer on monday, and pack a couple of mason jars with the beans and cooking water and keep them in the fridge. Lasts about five days. If you want you can add salt to the jars, but not during cooking (it will make the beans tougher).

Freeze them, after cooking, in some of the water they were cooked in. They will keep for some time in the refrig. if the water covering them is changed every day or two.
