Answers:
This is a really easy lemon pasta ---- I like it hot or cold!!
1 pound spaghetti
2/3 cup olive oil
2/3 cup grated Parmesan
1/2 cup fresh lemon juice (about 3 lemons)
Salt and freshly ground black pepper
1 tablespoon lemon zest
1/3 cup chopped fresh basil leaves
Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally, about 8 minutes. Meanwhile, whisk the oil, Parmesan, and lemon juice in a large bowl to blend.
Drain the pasta, reserving 1 cup of the cooking liquid. Toss the pasta with the lemon sauce, and the reserved cooking liquid, adding 1/4 cup at a time as needed to moisten. Season with salt and pepper. Garnish with lemon zest and chopped basil.
Ice cream sundae!!!!
shallow fried veggie burger in a bun with salad- takes about 5 minutes.
spaghetti napoletana- durum wheat pasta (the non-egg pasta that's in every single supermarket on earth in the non-fridge pasta section) and a tomato and basil sauce (nearly all the jar sauces of this flavour are vegetarian, ingredients are usually just tomatoes, onions, basil, (other herbs) and maybe citric acid).
You can make your own sauce- destalk and finely chop a tin of plum tomatoes in juice (keep the juice). Dice an onion and a clove of garlic and fry together with some herbs (parsley or oregano or basil are best), when golden, add to the tomatoes and juice. If you have a hand or normal blender, you can blend the ingredients together for a smoother sauce, otherwise, just mix together with a wooden smooth. Add a little sugar- 1/2 a teaspoon to 1 tsp, some salt and pepper and heat. Serve hot with the cooked pasta.
If you can use tuna then How about a tuna casserole. Macncheese, onions diced, tuna mixed together then baked. You do not have to bake it but that is the way I prefer. You can do it allon the stove in a matter of about 15-20 minutes. Just add your onions to the boiling water and noodles so they cook. Drain and put both in pan and make sauce then add tuna.
spaghetti with marinara sauce
mac & cheese
Pancakes from Hell
prepare pancakes as you normally would
in a blender place, one cup of blue berries, 3/4 cup of honey, and 2 whole habenero peppers
blend for until well chopped and blended - serve over pancakes.
because of the habeneros don't touch any body parts after touching peppers or touching the syrup - wash up first
This salad is filling and delicious:
1 can chickpeas drained
1/2 red bell pepper diced
1/2 cup minced parsley
1/2 cup crumbled vegetarian feta
WHOLEWHEAT BUTTERMILK BREAD
A reliable version of this favourite loaf. The quantity of bicarbonate of soda used is small, but it is enough for the batter to rise without imparting the sometimes overt bicarb flavour.
4 x 250ml wholewheat flour
5ml sea salt
5ml bicarbonate of soda
15ml sunflower oil
15ml honey or molasses or brown sugar
100ml seedless raisins (optional)
500ml buttermilk or natural drinking yoghurt
sesame seeds for topping
Mix flour and salt.
Sift in the bicarbonate of soda (this is important)
Add oil, honey and raisins, if using.
Stir to mix and then pour in buttermilk or yoghurt.
Stir, using a wooden spoon, until ingredients are thoroughly combined - the batter will be soft and sticky.
Turn into an oiled 23cm x 8cm x 7cm loaf tin, sprinkle with sesame seeds and make a slight depressioin down the centre of the loaf.
Bake on the middle shelf of oven at 180 degrees celsius for 1 hour.
Stand for 5 minutes, then turn out and return to oven for 5 minutes to crips the sides.
Cool on wire rack
VARIATION:
Use 3 x 250ml wholewheat flour and 300ml muesli.
Avoid using muesli containing sunflower seeds and these will turn green in this bread.
