CREAMY CURRIED SOYA BEAN SALAD

This salad is sheer goodness, cheap, easy to amek and much tastier than it sounds. Serve it with bowls of chutney, coconut for sprinkling, lettuce and tomato, and introduce a grain in the form of tiny rice timbales, made by packing a rice salad into ramekins and turing out prettily

4 x 250ml cooked soya beans (or half soya and half haricot)
1 small pineapple, cut into small dice
1 bunch spring onions, chopped
100ml seedless raisins
2 Golden Delicious apples, peeled, diced and tossed in lemon juice
onion salt or sea salt to taste
200ml coarsely chopped walnuts
20ml curry powder
200 ml thick mayonnaise
200ml bulgarian yoghurt
a pinch of sugar

Mix soya beans, pineapple, spring onions, raisins, apples and salt.
Make the dressing by steeping the curry powder in 40ml boiling water for a few minutes to remove the raw taste.
Stirn the mayonnaise with the yoghurt until smooth, the add the curry powder and a pinch of sugar.
Stir to mix.
Fold dressing into salad, and chill for several hours.
Toss in the walnuts just before serving.
