Vegan breakfasts?!

Question:

Vegan breakfasts?

i'm a vegan and looking to eat even healthier... can anyone give me good vegan breakfast suggestions that are preferably under 450 calories? heheh. thanks

Answers:
Oatmeal porridge made with soy milk -- I like a lot of cinnamon, nutmeg, and ginger in mine with a bit of maple syrup on top. I eat a bowl of this, and I'm not hungry til dinner.

Tofu scramble--loads of veggies, tofu, nutritional yeast, herbs, and spices. I wrap these up in tortillas and store them in the fridge for my bf to eat on his commute to work. I also make a version with either potatoes or beans instead of the tofu.

Cereal with soy milk, nuts, and fruit

Smoothies made with silken tofu and frozen fruit

Weetabix-type cereal is my new love. It's my summer alternative to oatmeal. I eat it with the same spices and maple syrup. Yum.

Spread nut butter on a banana and sprinkle with cinnamon for something fast and filling.

Soy yogurt with granola and fresh fruit

Wholemeal toast, bagel, or English muffin with nut butter and fruit preserves. I've had really good tofu spreads at some bagel shops that are tasty as well.

Tofu Benedict--I use a recipe from How it all Vegan. I spice and saute some tempeh as "bacon" and add avocado and tomato slices.

Vegan pancakes with maple syrup--not so healthy, but oh so good. :-) So are banana nut muffins.

None of these should be over 450 calories (well, maybe the pancakes)--not even 350 unless you're stuffing yourself. It's all about portion control.

cereal with soy milk, toast with jam, morning star breakfast patties, smoothies with soy yogurt, soy yogurt with granola and fruit...

Check out this link. I think it might help. Or at least I hope it helps with your vegan diet.

personally, my absolute favorite thing to eat is rice porridge. I blend/grind boil in a bag brown rice in my magic bullet (every vegan's friend...) and boil the grinds with water, a pinch of salt, then add agave or fresh fruit (bananas or raisins) and some almond milk... it tastes like dessert. 1/2 cup of rice is 150 cal, 1/2 c almond milk by blue diamond is 20 cal, 1 tbs agave is 60 cal, a small banana is about 70 cal, 1/4 c raisins is 130, you could add some flax oil or something... dunno, hope that helps... you can even blend all the junk together and then fry up some rice pancakes ;-)

whole grain cereal with soy milk, celery and ranch, and maybe a salad with some granola with low fat dressing, and a piece of toast

i made a tofu scramble today. it was awesome. get firm tofu and some red bell pepper (i used frozen pre chopped to save time) saute the pepper and cube the tofu. put the tofu in the pan and mash it up a bit with a fork. for lower fat use a touch of oil and a tablespoon of water. salt and pepper and youre done.

Fresh tomatoes, olives, and hummus on bagel is a refreshing alternative

Lol, fruit mixed in a blender with vanilla soy milk.

omelet? it is good for breakfast

I am a simple vegan gal who likes a wholesome breakfast, but I'm busy so I'd rather spend my time eating it instead of of preparing it. My favorite is Cream of Wheat with soymilk and blueberries or raspberries. It takes about 5 minutes and its yummy and filling. I also make oatmeal with walnuts and bananas. I sweeten it with agave nectar or equal. Simple, yet very satisfying, especially with a hot cup of peppermint tea to kick start your day.
P.S. I use frozen fruit b/c its cheaper and lasts longer.

grit, tomatoes, slice onions, and a avacado

Apple with 2 TBS. Nut Butter(almond, cashew etc.)

You can make pancakes by using banana instead of eggs and soy milk instead of dairy milk.
