If you want a chewier or not as soft tofu freeze it with the marinade after drying out the fresh tofu very well. Then let it defrost for a day in the refridgerator and it will marinate as it defrosts...can premarinate/store a lot of tofu this way. =)

Well I just put it in a bowl with some olive oil, loads of garlic, a few seasonings like salt, pepper. tabasco sauce covered it with film and left it in the fridge overnight, next day I cooked the lot in a saute pan. Yum.
Tofu is an EXCELLENT food to marinate! It really takes the taste of what you are marinating it in. Most oil-based salad dressings (Italian, vinaigrette, etc.) make for good marinades too. Store bought ones are just fine as well. Just put the tofu in a dish and dump the marinade on it. Move the tofu around accordingly to make sure that the marinade is distributed evenly.
Just let it soak for at least 30 minutes. This works well with tempeh, too. I like to marinate with olive oil and soy sauce for some dishes. I also use a marinade of vegetable broth with garlic and herbs for roasted tempeh. For vegan eggs benedict, the recipe I use calls for olive oil and apple cider vinegar. Barbecue sauce is yummy too. You just marinate it for 30 minutes, and either pop it in the oven or throw it on the grill. Tasty!
After defrosting frozen tofu squeeze out as much liquid as possible , cut into chunks and marinade with fresh squeezed lemon and mint sauce leave for minimum of 10 mins , add a couple of pinches of salt , lots of black pepper, dip into flour and fry. This is delicious in pittas with salad.
Here are some things I use, soy sauce, vinegar, soy paste (not the same as soy sauce). Not together, but for separate dishes or flavors. I like to add basil in addition to salt/pepper. You can try anything, BBQ sauce, peanut sauce, etc...
