What is the best vegetarian dish you've ever had?

Bonus points for recipes!

I've had some people make me amazing vegan culinary feats (like fake veal parmesan - really surprising what a dedicated genius chef can pull off), but for a recipe I could cook and eat everyday, nothing beats this coconut curry (really easy too):

INGREDIENTS:

* 2 bunches green onions
* 1 (14 ounce) can light coconut milk
* 1/4 cup soy sauce, divided
* 1/2 teaspoon brown sugar
* 1 1/2 teaspoons curry powder
* 1 teaspoon minced fresh ginger
* 2 teaspoons chile paste
* 1 pound firm tofu, cut into 3/4 inch cubes
* 4 roma (plum) tomatoes, chopped
* 1 yellow bell pepper, thinly sliced
* 4 ounces fresh mushrooms, chopped
* 1/4 cup chopped fresh basil
* salt to taste

DIRECTIONS:

1. Remove white parts of green onions, and finely chop. Chop greens into 2 inch pieces.
2. In a large heavy skillet over medium heat, mix coconut milk, 3 tablespoons soy sauce, brown sugar, curry powder, ginger, and chile paste. Bring to a boil.
3. Stir tofu, tomatoes, yellow pepper, mushrooms, and finely chopped green onions into the skillet. Cover, and cook 5 minutes, stirring occasionally. Mix in basil and bok choy. Season with salt and remaining soy sauce. Continue cooking 5 minutes, or until vegetables are tender but crisp. Garnish with remaining green onion.

(A few notes: First, I usually use heavy coconut milk anyway because I like it thick and flavorful. Second, the fresh ginger and chile paste can be replaced with ginger powder and chile powder to make the recipe easier while only changing the flavor slightly. Last, the recipe used to have bok choy but it was hard to find and diluted the flavor too much for my liking - feel free to add throw some bok choy in, or serve over rice or with noodles. It's an easy recipe to experiment with.)

for vegetarian dishs,i like all the fav will hav to be eggplant....i like grey,with no yellow or brown power...and no tomatoes.

Sloppy Steve's from The Farm cookbook; not sure if it's legal to copy it here though; it's basically oil fried tofu with tomato sauce, onion, garlic, on a bun like Manwich, a homemade variety of Manwich with tofu instead of meat

Have you tried Falafel? It's either an Egyptian or Lebanese snack... not sure which. >.< I've never made it myself but I know the recipe.

Ingredients: 1/2 kg chick peas-soaked overnight
2 tbsp chopped parsley
2 tbsp coriander
1/2 green chilli
3 tbsp garlic paste
1 small onion-diced
75 ml water
25 gm flour
salt & pepper
1/2 tsp cumin powder
1/2 tsp bicarbonate of soda

Mince all ingredients together. Season well.

Make 50 small balls out of the mixture and deep fry over a moderate flame until golden in color and completely cooked. Balls may be messy in a sandwich, so I prefer just one flat, cutlet type falafel.

These are good in a pita sandwich. Split the pita on one side (lengthwise) to form and opening.

Place a layer of falafel, some tahini, sour cream and lettuce along with some chopped onions and serve.

There's this restaurant in Los Angeles called California Vegan. They serve vegan pancakes with soy ice cream for dessert. Those pancakes are the single greatest thing that's ever happened to me.

Tofu Cashew Meal

(made it up myself)

Cook broccoli, carrots, mushrooms, green string beans, tofu and cashews. In seperate small pot, mix corn meal, soy sauce and water to form a paste. MMMMMMMMMmmmmmmm!

Pour on the paste when veggies are soft.
