Strict Vegetarian?
Was wondering if other Strict vegetarians /vegans out there had some recipes...i'm running out. Or just some examples of what you eat on an everyday basis and how long you've been a vegetarian or vegan. I have am coming up on my 8 month anneversary!! Whoo-hoo

since i'm still in highschool i usually eat the same thing (basically) everyday
oatmeal made with almond milk, brown sugar and a piece of fruit
half a pb&j sandwich while at school
a fruit smoothie made from a banana, bubbly water, and one or two other types of fruit.
then whatever for dinner. i love vegan tacos ( i always use this as an example :)) i use beans, spanish rice, lettuce, guacamole, jalapenos, olives and salsa for toppings. its really filling and i dont miss the meat or dairy products at all. i also like to make spaghetti squash and put pesto (vegan) or red sauce on it. oh! and if you have a trader joes by you, there is a product called penne arrabbiata which is trader joe's brand and it is awesome! seriously it is perfect and it only takes seven minutes to heat it on the stove. add some spinach or peas to it and its a great quick meal.

I'm in a rut, too. Lunch was nice today. I found an extra package of veggie deli "meat" in the fridge and had that instead of a veggie burger. (I knew I had two in there, but was saving them for our vaction. Not only will it save money on food, but will be easier so that we don't have to worry about stopping at particular fast food joints-- Burger King [they have a veggie burger] and Taco Bell [beans instead of meat and no cheese]). My poor baby (I'm six months pregnant) is probably not liking it, either. (I could use a grin smiley icon here). I'm surprised she hasn't started kicking out of annoyance. I'm having pasta with tofu and tomato sauce again tonight.

I've been vegan for 5 years, and was vegetarian for 5 years before that. I like to eat a lot of different ehtnic foods. Like tonight, my bf and I made a Thai green curry with tofu and veggies. I really like VegWeb for recipes. You can search by category or ingredient. And here's some other websites I like.
