You can always buy veggie burgers and use those.

you could use a grilled portabello mushroom, veggie burger, bean and potato patty, grilled eggplant, cucumber, or a salad of asparagus, tomato, and radish with loads of fresh sprouts. My veggie daughter likes rice and beans in her sandwiches.

Whole wheat bread
Slice of tomato, or sliced up cherry tomatoes
Avacado
Veggie cheese
Lettuce
Small amount of mayo and/or mustard.

Yum!

If they're heart shape try putting strawberry jam and cream cheese in them. Its a yummy combo and it will make the centre pink in colour.

If he doesn't eat milk products than just use jam or make a nice tomatoe sandwich for him.

what type of vegatarian? does he eat cheese?

Hummus in a pita with lettuce, cucumbers, mushrooms...whatever - w/ sharp cheddar if he does cheese - stay away from the veggie cheese...icky

This one below is REALLY TASTY!

-- AVOCADO

-- THINLY SLICED RED ONIONS

-- RIPE ROMA TOMATO SLICED

-- FRESH BASIL LEAVES

-- THIN SLICES OF FRESH SOFT RICOTTA (IF he eats cheese - optional!!!)

-- bit of olive oil and balsamic vinegar, but not tons.

Have fun.

Use fresh warm bread.

hummus
tomato
lettuce
avocado
some alfafa sprouts
little pepper

Avocado and Tomatos!

My Daughters favorite, Avocado and Tamatoe/w lettuce or sprouts.
My Sons favorite, PB&J
