Can anyone give me some ideas for veggie lunches? I need inspiration please?

For as long as I can remember my lunches have always been based on cheese, with salad, in a sandwich or on toast, but over the last few years I have developed an intolerance to cheese which seems to be getting worse. So I think it's time to cut it back.

It's an alternative protein element I am looking for but I don't like meat mid day and eggs are breakfast food to me.

So - no meat, no fish, no eggs, no cheese - help!

Several of you have mentioned pitta bread so I found a recipe and made a batch this morning. I can see the advantage over a normal sandwich - no more filling on the floor and down my clothes.

The last time I tried chick peas I thought they were awful - bland and tasteless, but that was about twenty years ago, and I think things have changed a lot since then. I look forward to trying out some spicy recipes

The last time I tried chick peas I thought they were awful - bland and tasteless, but that was about twenty years ago, and I think things have changed a lot since then. I look forward to trying out some spicy recipes

fettucine alfredo with garlic bread and salad
bagels with peanut butter (lots of protein)
peanut butter and jelly sandwich (or any other kind of veggie sandwich) with potato chips
pasta with marinara sauce
pasta with pesto sauce
potato salad
fruit salad
regular salad
many kinds of soups have no meat in them

try a meat alternative i.e quorn sausages there not bad

broccoli, broccoli, broccoli! You get everything from Broccoli, that you get from those other proteins. Maybe more! Broccoli and vinaigrette or ranch...mmmmm good

marinated tofu grilled (cook the night before and bring it for lunch)

Chickpeas in salad, or bean salad

Even peanut butter with carrots or celery or on whole grain bread

Also, check out www.vegweb.com or www.allrecipes.com both are excellent rescources and you can search and find meals based on what is in your cabinets. Also, vegweb has an easy meal section for quick healthy lunches, snacks, etc.

Falafels are good too. They carry well, are cheap, plenty of protein (beans) go well with cabbage and onions and tomatos, and you make make a nice sauce with yogurt, cucumbers, mint and cilantro. Tasty.

I'm not a vegetarian but my daughter-in-law is. The last time I visited her, I marinated tomatoes in no fat Italian dressing and she loved it. You can put it on pita bread or in a wrap like she did.
You can add other ingredients to round it out, but try it.

do you like beans and lentils? they're a good protein source. you could make some lentils with onions and carrots and have that with cous cous or pasta. or make some beany soups and take them to work in flasks (i know the weather is getting warmer but good for future wintery days).

you can make all sorts of different dishes with beans and lentils, and you don't have to go to all the trouble of cooking them for lengthy periods as the tinned pulses are good with anything.

bean burritos

Make some chili loaded with veggies and as many beans as you like. Serve over brown rice and you have a complete protein. There's also black beans and rice.

VEGETABLE DISH

1 1/2 c. carrot sticks
1 pkg. frozen green beans
3/4 c. green pepper strips
1 c. sliced onion (lg.)
2 c. celery sticks
2 c. canned tomatoes
2 tbsp. melted butter
2 1/2 tsp. salt
1/4 tsp. pepper
1 tbsp. sugar
3 tbsp. tapioca

Put first 5 ingredients into baking dish. Cut tomatoes and seasoning. Stir tomatoes and seasonings together with other vegetables. Bake in 350 degree oven for 2 hours or more with lid on.

I quite often make a big pot of veggie chilli at the weekend and freeze portions for lunches during the week. You can throw in just about any veg you have lying around.

Lentil soup is really easy to make, my version is basically red lentils, a couple of chopped carrots, an onion, some chicken bovril and boiling water!

Baked potatoes can be filled with just about anything so vary your fillings. My friend gave me a fantastic recipe for lentil pate if you're interested and its great in tatties.

Couscous and roasted veg is also really simple and tasty and even some mixed beans and savoury rice can go down a treat.

Chips and curry sauce!

A rocket, pine nut, basil and watercress salad with a light vinagarette.

Humous, roasted red papper and olive sanwij.

Pot Noodles!

16oz T-bone steak and chips.

Well, if you have a microwave on hand, may I suggest Boca Burgers?! They are delicious, and the chik'n patties are mocrowaveable. Bring that with you, and a salad, some almonds as well, and have a blast.

Hoummus and salad in brown pitta breads, simple delicious and vegan !! Add some kidney beans or buy something like Sainsbury's 3 bean hoummus. You could have veggie 'bacon', lettuce and tomato sandwiches or vegan ham and salsa!!

Take a bowl of boiled noodles.
Heap on it finely chopped cucumber.
Place a layer of potato wafers on the cucumber layer.
Sprinkle some Tomato sauce.
Taste it and tell me.

I just had a sandwich filled with a couple of tablespoons of kidney beans mashed up with some natural yogurt, cooked sweetcorn, chopped pepper, chopped spring onion & a pinch of chilli powder. It was yum!

Kidney beans are a great source of protein.

I am in love with peanut butter and celery and grapes both taste very good with it!!! Oh and bananas!!! You could always just have a salad. Or you could make fruit smoothies!!!

Did you know that green vegetables are high in iron and 28% protein, and if eaten with grain, you will have full amino acid complement.
