Is there a way I can make my favorite recipies with out eggs?

I'm vegetarian, but I am trying to go vegan. My problem is, all of my favorite baked goods have milk, butter, ect. in them. I can do with out, but I love to bake. Also, can things like popovers and quiches be made with an egg replacer?

You can buy egg replacement! You should be able to find it in health food stores! =)

I found the website below a while back. It is called Cook's Thesaurus. It has substitutes for everything. I hope you find it a useful resource also.

You can replace milk with rice or almond milk, butter with oil, and if you take two tbsp ground flax and add it to 5 tbsp warm water, let it gel for 5 minutes, you will get an egg substitute that is the exact consistency as an egg. I use this for making wheat/egg free muffins, cakes, cookies, etc.

Applesauce works for both an egg and oil replacer. I've also used vanilla soy milk for milk. Bananas also work for eggs, though I've have seen cautions that the baked good might taste bananay.

I did a Yahoo! search, "vegan baking substitutes" and found some good lists, some of which I have bookmarked. I have also bookmarked The Cooks Thesaurus.

After reading the Flikr list (the second hit from my search) I was reminded of canned pumpkin, too. We use that for pancakes. (My husband and I buy the Hodgston Mills brand pancake mix. It's whole grain, cheaper than Bisquick and about the same price as store brand and Jiffy. Healthy and cheap.)

I'm sure I have more bookmarked, but what I found after doing a search, is similar, if not the same, as what I've read elsewhere.

I also use the following chocolate cake recipe from VeggieBoards. I use whole wheat flour and have been using applesauce for the oil. I also use about ten tablespoons of cocoa. I put the link in the Source section. It's the second link. The link after that is for chocolate frosting, from VegWeb.
