Anyone have any quick red lentil recepies?

not soups, but other easy to prepare meals

Fry a chopped onion in a little olive oil, add garlic (as much or little as you like),add a tin of chopped tomatoes, a little salt and some dried or fresh herbs(i like italian mixed herbs) and a tin of lentils boil untill carrots are soft. Add chilli if you like it, i like to add browned sausages pieces aswell or you could add veggie sausages or quorn pieces or any protein you like really or just serve the lentil mix with some nice slices of garlic bread, yummy xxx

You could make a Dhansak, an Indian curry that is made with lentil, u could google it and see if u can get a recipe

Soak the lentils- if they're split, you can skip that- then bring them to the boil in a pan of water. After they've boiled you simmer them, and add the salt. Other spices you can add at any point in the cooking, but if you add the salt first of all, the mixture won't boil. A bit of oil will add to the flavour as well, and turmeric is good with lentils.

Don't put too much water in there, the aim is to get the mixture to boil down so that most of the liquid has gone and the lentils are quite mushy (at least, that's my aim, if you prefer them a bit more whole, have them that way).

Cut up half an onion any way you like, and fry it whilst the lentils are simmering. When the onion is cooked to your satisfaction, add it to the lentils. If you have time, you can also add any other vegetables that you want in there, but make sure you cook them too, either by frying, or boiling along with the lentils. I occasionally put a scrambled egg into the mix as well, that's pretty good...

After mixing the veg with the lentils, serve with rice.

if they are already cooked or from a tin you can blitz them with some chickpeas, onions and make a veggie burger

How about lentil shepherds pie? whilst lentils are boiling ,boil some chopped potatoes for mash . when lentils are cooked add herbs, crushed garlic and stock cube, mash potatoes with butter, put on top add some grated cheese if you like and grill. should take 20-30 mins max.

I got this one from tescos...

200g dried split red lentils
1/2 tbsp turmeric
1tbsp veg oil
1cm piece fresh root ginger, grated
1tbsp cumin seeds
1tbsp ground coriander
4tbsp fresh coriander, chopped
seasoning

Rince the lentils & drain well, place in a large sauce pan with 850ml of water(i always put a couple of veg stock cubes in @ this point aswel).
Bring to the boil, then stir in the turmeric(warning-this will stain any wooden or light coloured plastic spoon yellow). Reduce the heat & partly cover the pan. Simmer for 30-35mins till thickened, stiring occasionally.

Heat the oil in a frying pan, add the ginger & cumin seeds(i always shove a load of chopped garlic in too) & fry for 30 secs or till the seeds start to pop. Stir in the ground coriander & fry for 1 min.

Season the lentils & add the toasted spices. Stir in the chopped coriander, mixing well. Transfer to a serving dish & garnish with coriander.

We tend to eat it with Nann bread pr poppodoms.

Shepherdless pie:

Chop up an onion & a couple of cloves of garlic and fry for a few minutes over a gentle heat until soft. In the meantime, thinly slice a couple of carrots and open a can of chopped tomatoes. Add carrots, tomatoes and approx 100g red lentils to pan & cook for about 15 mins till carrots are soft (depends on how thick/thinly you sliced them) and the lentils are cooked. Season to taste. Put the mixture into a baking dish and cover with a layer of mashed potato then sprinkle over with some grated cheese & a scattering of sesame seeds. Stick in the oven at 190 C for about 30-40 mins.
