Suggestions for using buckwheat?

I would like to start eating more buckwheat as it is a complete protein. I have buckwheat flour but rarely use it because I don't bake. I know I can make the standard buckwheat pancakes, but I want some more options.

So, I bought whole buckwheat groats at the healthfood store. How can I use these groats? Any suggestions for cooking methods and add ins??


Answers:
Rinse a cup of groats. Drain. Mix with one beaten egg. place in skillet and stir over med low heat until "dry" add 1-1/2 cups water and bring to boil. cover and steam over very gentle heat 15 minutes. Serve Kasha- that's what it is called- with cabbage or sweet squash. mix it with onion and garlic and whole wheat bow tie noodles.
I find them too bland my self and have begun to love soybeans shelled and quinoa!

I've never tried using buckwheat...since I live with a Vegetarian, perhaps I should :)

Have you ever looked into Soba noodles? They are a Japanese noodle that is made from Buckwheat flour, regular flour, and water. With a bit of research you could find the exact ratio of the flours and water. And you could make a Simple vegetable stock for a broth. If you have a nice sized straight side pot (Tall pots perferably) you could cut some Carrots, Onions, Celery, and add your favorite herbs to the mix to create a simple vegetable stock. It only takes about 45 min- 1 hour to create. After they have simmered for the hour, strain out the vegetables and voila you have a vegetable broth, which you can add freash veggies to along with your newly made noodles.
