Answers:
substitue egg plant for the meat. Yum! Also if they are vegans they won't eat eggs or dairy products so here's a vegan recipe

Ingredients:
2 tablespoons olive oil
1 cup chopped onion
Three cloves garlic, minced
6 ounce can tomato paste
Three (28-oz.) cans peeled plum tomatoes, chopped with juices reserved
1/2 cup chopped fresh basil
1/2 cup chopped fresh parsley
1-1/2 tsp. dried oregano
1/2 tsp. crushed red pepper flakes (optional)
Salt and ground black pepper to taste

Lasagna:
1 tablespoon salt
1 pound dry uncooked eggless lasagna noodles
Two, (16-oz.) packages firm tofu, drained
Two cloves garlic, minced
1/4 cup chopped fresh basil
1/2 cup chopped fresh parsley
Salt and ground black pepper to taste

For the sauce, in large, heavy saucepan, heat oil over medium heat. Add onion and garlic and cook, stirring frequently, until onion is soft, about five minutes. Add tomato paste and cook, stirring, for one minute. Add tomatoes with juice, basil, parsley, oregano and red pepper flakes. Cover and simmer over low heat about 1 hour. Season with salt and pepper. Meanwhile, bring large pot of water to boil. When water boils, add salt and noodles. Cook until al dente, about 12 minutes, stirring occasionally. Drain, rinse with water and drain again. Preheat oven to 400-degrees. Crumble tofu into medium bowl. Add garlic, basil, parsley, salt and pepper. Stir until well blended. To assemble, spoon about 1-cup sauce over bottom of 13-by-9-inch baking dish. Add layer of noodles and top with one-third tofu mixture. Spoon over about 1-1/2-cups sauce and top with another layer of noodles. Cover with one-third tofu mixture and top with 1-1/2-cups of sauce and another layer of noodles. Top with remaining tofu mixture and 1 cup sauce. Cover with foil and bake 30 minutes. Remove from oven and let stand about 15 minutes before cutting and serving. Serve with remaining sauce. Recipe makes 12 servings.

yes you can. I have enjoyed a lasagna that was made with spinnach instead of meat. As well one made with tofu instead of meat. Good luck and enjoy

Substitute the meat with eggplant. The rest of the recipe should be fine without any other alterations.

Definitely! Use diced zucchini and shredded carrot sauteed with onion and garlic, in place of the meat. Much better than meat!

you can try a spinach, it seems to go over very well, rachelle ray , & a few others have some real good rec. at food network .com

They should have vegetarian tomato sauce at any super market. My Friend is a vegetarian and she loves pasta and she just gets the meat free stuff at the store. I liked it, and tasted like normal homemade lasagna.

I've used tofu, cheese, and spinach instead of meat and all were delicious. Get creative!

You dont have to sustitute the meat at all, just dont bake meat into the lasagna, and it tastes the same.

Here is a website that might help you, and remember if some of your guests are vegans that means no eggs, no milk or milk products including cheese, tofu is a good alternative.

you can use the fake tofu hamburger meat you can get it at most grocery stores w/ the vegetarian stuff. I use it in everything from chili to tacos, spaghetti,lasagna. Tastes great and same consistancy as hamburger meat. Half the time nobody knows the difference unless you tell them. You can make it just like you make regular lasagna or you can get vegetarian sausage and slice it up and add it in w/ the hamburger too.

yeah

MEATLESS LASAGNA

3 cups shredded mozzarella cheese
1 15 oz container ricotta cheese
1/4 cup fresh parsley, chopped
1/4 cup grated Parmesan cheese
2 teaspoons minced garlic
3 cups marinara-style pasta sauce
9 no-boil lasagna noodles
2 cans (15 ounces) spinach, well drained
1/2 teaspoon black pepper, cracked
pinch of red pepper flakes

Preheat oven to 375° F.
Combine 2 cups of mozzarella cheese, ricotta cheese, Parmesan cheese and garlic, chopped parsley and red and black pepper. Set aside.

In a 9x13 inch baking dish pour 3/4 cup marinara sauce. Place 3 pieces of noboil lasagna on the sauce, covering with another 1/2 cup of the sauce.

Layer with half of the spinach, then a layer spreading half of the cheese mixture over the spinach. Repeat layers. Finish with 3 more lasagna strips and cover with remaining sauce.

Cover with aluminum foil and bake for one hour. Uncover and top with 1 cup mozzarella cheese during last 15 minutes of baking.

Allow to sit 10 minutes before serving.

I have a somewhat different answer. I use CHOPPED BLACK OLIVE BITS to substitute for meat. Healthy, tasty, nice texture. Unless you are on a low sodium diet, it is a great alternative. Be sure to exclude added salt (if you use any, I don't) because olives are on the salty side. I have a pantry full of these!

you can try substituting the meat with eggplant. it will sort of taste like eggplant parmesan. also, you could try making vegetable lasagna. its a completely different recipe, really nothing in common with regular lasagna, but it is delicious.

yes you can layer it with roasted red peppers or roasted tomatoes or mayb even a different type of sauce.

yes there is meatless lasanga u can add lasagna with just sauce and cheese or u can do do a veggie lasange thats two ways i live and its just as good

Hmm.. Get a good vegan tomato sauce, or make your own.... Boil some whole wheat lasagna noodles & make the lasagna with sauce, spinach, carrots, zucchini, broccoli, mushrooms, have fun with it :-D Fried, breaded eggplant is YUMMY too but not that good for you lol .

You can use tofu as stated in this recipe or make it the way you normally do and use Morning Star meat crumbles as a meat substitute, soy ricotta and mozz cheese(they also make great sloppy joes as well).

INGREDIENTS

* 2 tablespoons olive oil
* 1 1/2 cups chopped onion
* 3 tablespoons minced garlic
* 4 (14.5 ounce) cans stewed tomatoes
* 1/3 cup tomato paste
* 1/2 cup chopped fresh basil
* 1/2 cup chopped parsley
* 1 teaspoon salt
* 1 teaspoon ground black pepper
*
* 1 (16 ounce) package lasagna noodles
*
* 2 pounds firm tofu
* 2 tablespoons minced garlic
* 1/4 cup chopped fresh basil
* 1/4 cup chopped parsley
* 1/2 teaspoon salt
* ground black pepper to taste
* 3 (10 ounce) packages frozen chopped spinach, thawed and drained

DIRECTIONS

1. Make the sauce: In a large, heavy saucepan, over medium heat, heat the olive oil. Place the onions in the saucepan and saute them until they are soft, about 5 minutes. Add the garlic; cook 5 minutes more.
2. Place the tomatoes, tomato paste, basil and parsley in the saucepan. Stir well, turn the heat to low and let the sauce simmer covered for 1 hour. Add the salt and pepper.
3. While the sauce is cooking bring a large kettle of salted water to a boil. Boil the lasagna noodles for 9 minutes, then drain and rinse well.
4. Preheat the oven to 400 degrees F (200 degrees C).
5. Place the tofu blocks in a large bowl. Add the garlic, basil and parsley. Add the salt and pepper, and mash all the ingredients together by squeezing pieces of tofu through your fingers. Mix well.
6. Assemble the lasagna: Spread 1 cup of the tomato sauce in the bottom of a 9x13 inch casserole pan. Arrange a single layer of lasagna noodles, sprinkle one-third of the tofu mixture over the noodles. Distribute the spinach evenly over the tofu. Next ladle 1 1/2 cups tomato sauce over the tofu, and top it with another layer of the noodles. Then sprinkle another 1/3 of the tofu mixture over the noodles, top the tofu with 1 1/2 cups tomato sauce, and place a final layer of noodles over the tomato sauce. Finally, top the noodles with the final 1/3 of the tofu, and spread the remaining tomato sauce over everything.
7. Cover the pan with foil and bake the lasagna for 30 minutes. Serve hot and enjoy.

Don't forget to leave out the cheese too since vegans will be eating it too!

Looks like lots of great ideas on here - I like making lasagna with tofu ricotta, mushrooms, spinach and a little bit of the Boca crumbles (fake hamburger style crumbles that are vegan)

Yum!

Go and buy a product called TVP (textured vegetable protein) from the supermarket. It's a vegetarian version of mince and it goes perfectly in lasagna. Just add tomato and vegan cheese
