I hear them say that kidney beans contain iron and protein and minerals that our bodies need.
I am just a little confused as to whether cooking beans destroys all the goodness in them.

I can't say for other kinds, but I wouldn't suggest eating kidney beans raw. They're toxic when uncooked.

If you are talking about green beans,steam the for as little time as possible. The liquid has nutrients so add to gravy or soup. Some vitamins are heat labile.
If you are talking about the dried beans that are eaten for protein, they need to be soaked and cooked to access the protein.
