Mine always cook unevenly and half are burnt and the other half are not cooked enough

Get a chip slicer for even slices and put them in a bowl and lightly coat with Olive oil and sea salt. Spread them out on cookie sheet in single layer and then bake them at 450 until golden brown. Yum.
after your fries are cut, soak them for about 1/2 hour, then empty water and rinse them again. This washes some of the starch out. Next, when you fry them make sure you do not put too many in the basket, this way they can cook at the same rate. Also if their starting to burn on the outside you may have to double fry them, pull the basket once they start to cook, let them cool and drop them again. Between soaking and double frying you should get some decent fries.
First, cut the fries evenly, and constantly stir them to make sure they don't burn, and get an equal amount of heat. To get the best sweet taste, put sugar in the oil first, and then more sugar on the fries.
make sure all of your fries are chopped evenly and they are dry when you drop them in, use peanut oil to fry them and the temperature should be about 350-375 degrees. dont add too many fries at a time.

It helps if you soak them in salt water for a few minutes (draws out the starch) and then dry them really well. If you fry them, the oil needs to be really hot. I oven fry them at 450, just brush with olive oil, sea salt, and fresh ground pepper, then bake them until crispy, turning once. This works great with ruttabega and turnips too.
heat the oil in a deep fryer.. don't put the fries in yet.. let the oil get hot.. then unplug.. carefully and quickly put in fries and cover.. do not plug in again the heat of the oil will cook the fries. When all the crackling is finished you will have perfectly cooked fries if you didn't put too many in the deep fryer.
Another tip: a small slice of apple will make it so the fries aren't too greasy! too much apple will make things soggy!
Some companies such as Lays adds a little sugar to speed up the frying process.. this I don't recommend as it changes the taste of the fries a bit! Best oils are sunflower oil or coconut oil!
Honestly - get the frozen ones.. I can't get them right either!!!
