The term "organic" just refers to how the food is grown and processed, otherwise the end product looks the same as anything else at the supermarket.
Hence your concern about whether something genuinely falls under the organic label is shared by a lot of other people.
The temptation to just re-label produce as "organic" and charge double has probably run across the mind of about every food processor in the country.

Buy from a farmers market. There are no real set guidelines for what "organic" is so most things you are seeing in stores labeled it is just to make a quick buck on people following a trend.
mostly organic vegetables do not look as good or healthy than other non organic vegetables. and also much smaller in size,(maybe do not taste as good.), also at least twice the price of normal ones.
if you don't trust the USDA organic label or won't take the seller's word for it - look at the vegetable for imperfections. If the vegetable looks perfect, it's possible it's commercially grown. Look for insect damage, if there isn't any it may be because they are using insecticides to kill the insects. Finally ask yourself if you eat it, do you get any reaction, like headache, diarrhea, any allergic reactions?
