Chocolate chip cookies with a hint of Expresso!
* 2-1/4 cup whole wheat pasty flour
* 1/3 cup cocoa or carob powder
* 1 tsp. baking powder
* 1/2 tsp. sea salt
* 1 cup margarine (spectrum spread is good--non-hydrogenated)
* 3/4 cup raw sugar
* 3/4 cup Sucanat (or raw sugar with molasses)
* 1 tsp vanilla extract
* 2 eggs worth Egg Replacer (I use ground flax seeds--no chemical additives--I'll explain below, but you can use any)
* 1/2 - 1 package vegan chocolate or carob chips
* Some espresso--cooled
Preheat oven to 375 F.
Stir flour, cocoa/carob powder, baking powder, and salt.
Add margarine, sugar, Sucanat, and vanilla.
Mix well.
Grind up until ultra-fine, 1 tbsp. flax seeds--the easiest way to do this is in a coffee grinder.
Transfer ground seeds to blender or food processor and add around 1-1/2 tbsp. coffee (if you don't like coffee add water).
Process until you get a pasty, thick substance.
Add to mix.
Stir.
It will appear a bit dry--that's good.
It allows you to add more coffee rendering it perfect and moist.
Add chips. Mix AGAIN.
Dollop onto prepared cookie sheet and bake for around 15 minutes.
Let cool.
okay! now enjoy!
Fettucine Alfredo with zucchinini & squash
Meatless Lasagna (or you could sneak in fake beef)
Salad with artichoke hearts, feta cheese, tomatoes
Make sandwhiches with a variety of toppings (pepperjack cheese, onion, yellow peppers, tomato) and leave some turkey out for them.
Try a vegetarian lasagna. I try to be vegetarian (I sometimes eat fish) and my husband, my family and his family, of course are not, but somehow lasagna is always a hit, add some nice crusty french bread and a dessert and you have a winner. foodnetwork.com has a great recipe for it, just type "vegetarian Lasagna" in the search bar on their page. Good luck!
Hi Rose. What about a really good quiche and salad? Or a pesto pasta dish, again with salad and some crusty bread? Or, and this is one of my favourites, a root vegetable soup with great bread and a simple salad?
For the soup you need some onion, carrots, sweet potato and pumpkin, diced and put into a saucepan with a little olive oil. Cook for a few minutes and then sprinkle with mild curry powder and pour in enough stock to cover the vegetables. Allow to simmer until they're soft, season and mash or puree.
I sometimes make my own pesto sauce but there are some great jar versions out there and it's easy to cook the spaghetti, mix it through and serve with parmesan cheese.
Hope some of this helps. Have fun...
