You can tell because it starts to coagulate.(Get chunky).

If it is fresh soy milk I suggest the most is two days. If it is from the tetra pak one, you can check on the "best consume date" but once is open, don't let it stay more than two days.

It depends on the amount of preservatives, and the temp of your fridge. But, two weeks is too long, I would toss it.
Sometimes I buy all natural-homemade soy milk, and after 2 days, it coagulates and smells bad.
But, when I buy the carton of 7-11 soymilk, it lasts for about a week.

Let me answer your question with another question...what difference does it make? It tastes so awful to begin with... okay that's not a helpful answer, i just prefer Rice or Almond milk when going for dairy alternatives. But basically just use the stuff until it starts to taste and or smell bad. Expiration dates were invented by lawyers. Lawyers hate food.

Hmm, I was wondering the same thing. I too have a carton of soy milk that's been left opened in the fridge for two weeks. What a coincidence!
