The Complete Idiot's Guide to Vegan Living (available on Amazon) is a good one, with alot of good information that I didn't know even after being a vegetarian for many years. Also, a book called Vegan Lunch Box (veganlunchbox.blogspot.com) is helping me a great deal as I'm finally converting to veganism.
This book I read many, many years ago, which ultimately made me determine vegetarianism was for me. It's a great starter book to realizing what a global effect this all has on everything. It is "Diet for a Small Planet" by Frances Moore Lappe.

Vegetarian Times Vegetarian Beginner's Guide (I know this one is about vegetarians not vegans, but it is still good)

"The Ethics of What We Eat" by Peter Singer (a world reknown ethicist and animal rights campaigner) This is a pretty confronting book giving very good ethical, environment and health reasons not to eat meat or support the industry.
I became vegan after having a little package from Animal Lib sent to me - it was a booklet about why to be vegan and how to go about it. I am sure PETA would have one.
