Answers:
You can eat everything you did before, but just don't put the meat in it.
Veggies, pasta, rice, fruits, soy, milk and eggs (maybe), sauces, Mexican, Chinese, Indian, Italian, etc..

Tofu is great in place of meat. Press the block between paper towels; cut it into cubes and cook in a wok/pan in light oil. People also bread or even deep fry their tofu.

You can also try meat substitutes. Morning Star Farms has good fake chicken and beef strips you can add to vegetable stir frys. Some places also have fake ground, lunch meat and most anything else you could want.

Here are some great vegetarian recipe directories.

Just browse through; you will find a whole world of foods from desserts, lunches, snacks, dinners, fake meat dishes like sloppy joes, and big veggie and rice dishes.

If you miss a specific dish, just ask, and at least 5 people will show up with a vegetarian recipe.

hi there,
i am a meat lover, but i do eat lots of veggies,
you can substitute portobello mushrooms for meat, cause the are big and meaty, i cook onions and bell peppers and fill add cheese and bake, or bread them and pan fry them, serve with any side dish, tofu has a neutral flavor, what ever seasoning you use or sauce you put them in the get the flavor of your seasons, i hope i could help you some, enjoy

ps. i eat meat once or twice a week

Pasta is great and can be done tons of ways and the same goes for rice. Be creative. Rice mixed with beans and veggies. Pasta topped with olive oil, garlic, spices and maybe white wine. Pasta topped with fresh tomatoes cooked with olive oil and white wine. Pasta with olive oil and fresh veggies like green beans. That one is a personal fave. I think you get the idea; just be creative and make stuff up!

It takes time to build up your recipe list. When I first started I was eating the same for two or three times a month. I've been vegetarian for almost two years now and my recipes are so extensive that I barely eat the same food more than once a month(besides veg stir fry, which is my fav).

There are a lot of recipes out there, try them, fix them to fit what you like and before long you'll have plenty of variety.
