Help!Tired of rice and salad!!!?

I was wondering if anyone had any good vegan recipes that aren't to time consuming to make? Even ways to make rice a little more exciting.

Veggie stir fry, whole wheat pasta with chunky sauce, garden bake casserole etc. Check out http://www.vegweb.com for tons of recipes.

Use a vegetable broth to steam your rice, use jasmine rice or wild rice, something fun and add black beans. corn, red onions, bell peppers, while it steams. For a protein I am a big fan of tofu cooked with sweet chili sauce, garlic, onions, shoyu and some napa cabbage. So yummy!

How about a nice pasta with fresh marinara sauce?

I love those fake corndogs available in the freezer section that contain soydogs.

How about greek tostadas made with a pita, hummus, feta and olives?

First Of All, I'm a vegitarian myself. But I just can't seem to give up cheese. I have a good product that you might have seen already,

I tend to mix a little brown rice with white rice for variety and because the brown itself is harder to cook. Also you can cook rice in soup to get a soup rice like vegetable soup.

Then you can take cooked rice and stir fry it with vegetables and seasoning to make a quick fried rice.

You should also try different kinds of noodles. Spaghetti, wheat, white, vermicelli, etc...

Vegetarian Shepards Pie

1 Butternut Squash
2 Zucchini
1 Tbsp Olive Oil
1 Large Onion
2 Stalks of Celery
1 Large Tin of Kidney Beans
1 Large Tin of Black Eyed Peas
1 Large Red Pepper
4 Tomatoes Diced
1 Garlic clove peeled and crushed
1 Tsp full of Arrowroot Powder
4 Large Sweet Potatoes

Steam or boil the sweet potatoes for 10 -15 min until completely tender

Place 2 tablespoons of water in a medium sized saucepan with the oil garlic celery and onion and cook for 3 min Add the squash and cook for a further 2 min stirring frequently Add a bit of water Cover lower the heat and simmer until squash is tender

Add the beans peas peppers zucchini and tomatoes and simmer for another 5 min

Mix the arrowroot with a little water and add to the saucepan mixture

Drain the sweet potatoes and mash

Transfer the saucepan mixture to a large baking dish

top with sweet potatoe mash

Bake for 12 - 15 min until sweet potatoe browns on top

try fresh fruit, u can make juice out of it, smoothies, fruit salads, etc. try nuts and seeds for trail mixes or cereals w/almond milk

Why limit yourself to rice and salad? Try some curried cous cous, quinoa pilaf, millet and lentils, spicy bean tacos, beans, onion, and leeks rolled up in a tortilla, pupusas, arancini, veggie soup (cooking rice in stock makes it more exciting) Add some fresh herbs-rosemary is awesome. Make some veggie kebabs with rosemary steamed potato, pearl onion (whatever veg you like) and grill them with bbq sauce. Open your horizons a bit. Add some nice raw kolrabi or raw asparagus to salads, along with fresh english peas and garbanzo beans. Make some interesting new dressings, such as green onion, blended with sunflower and olive oil, pine nuts, and some raw apple cider vinegar. Its all just about learning some new recipes. If you have to rely on rice due to allergies, try some of the more exciting rices such as japonica or forbidden rice. Good luck!
