Easy vegetarian recipes for lunch,dinner,and breakfast?
I need some recipes that are simple and easy recipes to cook for breakfast,dinner,lunch because my mom said she isn't going to cook 2 dinners but she full supports me.any way ...does any one have and recipes that easy to cook for breakfast,lunch,and dinner?maybe if u could suggest some snacks to eat when I'm home.thanks:)

Breakfast
Cereal and soy milk
Weekend breakfast - Homemade Corn fritters (corn, flour, egg, soy milk, fry in a pan like a pancake) and hash browns (grated potato fried in a pan with a little oil and salt)
Snacks - Dried fruit and nuts
Lunch or dinner. Baked potato. You can cook in the microwave of oven. Just add whatever takes your fancy. Beans, vegies, cheese,
Sandwiches and salads are very easy
Dinner - Rissotto. Bit of work but you can make a lot and then store in fridge/freezer to re-heat later
Same goes for Pasta dishes.
Make sure you eat plenty fresh vegies and fruit. They are also really good for snacking
here's what I just did for my breakfast.. I took pancake batter and put some coleslaw and some spices in it I put in a small bowl and microwaved it for 5 minutes. It was almost done but I had to flip it over and microwave it 2 more minutes.
I guess I should've microwaved in 7 minutes! Well the result was a thick pancake like omlete. Just needed a little cheese! It was good! Microwave ovens are okay for an occasional use. I don't use it regularly. I just wanted to have some time to do some yahooing before walking up to the fleamarket!
pesto sauce is really good
even just a basic pasta and red sauce. I like to buy the already made sauces made from prego and ragu, and there are a lot of vegetarian sauces from ragu.
Mexican is a really good idea too. Vegetarian refried beans are really easy to cook. and I like to put those in a tortilla and add some cheese a little lettuce or tomatoes onions and salsa and sour cream.
vegetarian quesadillas are really easy too. i like to grill the tortilla and fold it over and put cheese, green peppers, black olives, mushrooms, and onions.
Wilted Romaine Lettuce
3 small bunches (or 2 medium bunches of Romaine lettuce)
2 medium onions, chopped
2 tsp minced garlic
(Bacon if non veg)
about 1/2 lb Tofu, cubes
1/2 lb mushrooms sliced or quartered
You can fix this in a large skillet or a very large saucepan....
Saute the tofu separately (or the bacon first). Then saute the onions and the garlic and the mushrooms and add the tofu (or bacon). Drain off excess frying oil but leave some in for flavor. Wash Romaine lettuce leaves and separate them.Put the Romaine lettuce leaves in the skillet.Put enough apple cider vinegar to go up 1/4 of the side of the skillet , then add water so that the skillet has 1/2 full of vinegar water(ie equal vinegar and water). Simmer this covered, turning lettuce as needed with a large spoon..until the leaves are wilted thoroughly (the main vein of the leaves will be slightly crunchy..that is okay.) Serve hot
Ingredients
* 1/2 c. Rice
* 3 c. Water
* 1 tsp salt per cup of rice
* 1/8 tsp Mexican saffron
* 2 tbs oil or ghee
* 1 tbs raisins
Instructions
Boil the water.
In the meantime, wash the rice (3 times if possible). In a frying pan, heat the oil, salt, and rice.
Sauteeing the uncooked rice will bring it to the same temperature as the water, so boiling will not stop once the rice is added.
Once water is boiling, add saffron and raisins. Let the raisins boil so that they get plump and juicy.
Add the rice. If you've done things right, the water should keep boiling. Continue to boil it for a while; let it steam until the rice begins to come to the top. Then turn the flame low and let it cook for 12 minutes.
** Note Mexican saffron is somehow different from regular saffron, so make sure you use the right kind.
