You don't to have use a fat of any type to bake bread, though.
The list of ingredients on the package includes the type of oil used.
If you want to make vegan bread, you can use vegetable oil or extra virgin olive oil instead. Shortening is a vegetable base and is dairy free. I prefer using oils because I think it gives a better texture.
I would suggest that you make you're own bread and then you could monitor the ingredients going in.
There are some simple as well as fancy bread machines out there. You can also use a completely home-made recipe or a simpler box recipe. In both those, you can choose what kind of shortening to use in it.
