Answers:
I normally bring rice and beans in a tupperware container, or a veggie wrap/bagel for lunch. If they sit by an ice pack, they'll last for hours. Also, PBJ is vegetarian-friendly, or tofu stir-fry. And it all tastes good.

Good luck with your recipes!

Been in the same situation.

Do a tofu and veggie stir fry, you can use napa cabbage, bean sprouts, bell peppers onions and tofu with a little plum sauce or teriyaki sauce. Eat it with rice or noodles... Yum!

I'm vegetarian! :D
I usually have stir fry and alot of fruits and tofu.

good luck!

Hummus and pita with vegetables and maybe falafel (buy a box of falafel mix, add water like it says, let it rest, shape it into balls, bake it...it's really easy and available at almost any grocery store).

Soup in a thermos or microwavable container with some bread (and cheese or yogurt if you eat dairy).

Fake meat sandwiches, fixed however you like them - it's cheating, but it's easy when you're in a rush.

Try to find a copy of the Vegetarian Lunchbasket or any of the Moosewood cookbooks - the recipes are simple, healthy, and designed to be portable. I used the Lunchbasket book all through high school. For inspiration, check out veganlunchbox.blogspot.com.
