I would like to know if there any good,quick vegeterian chili recipes.

Fifteen Minute Chili

1 Fifteen Ounce Can Kidney Beans
1 Fifteen Ounce Can Black Beans
1 Fifteen Ounce Can Tomato Puree
1 Onion, Diced
3 Cloves Garlic, Minced
1/2 Cup Fresh Parsley or Cilantro, Chopped
1 Teaspoon Cumin
1/4 Teaspoon Turmeric
1 Tablespoon Olive Oil
1/2 Teaspoon Salt
Freshly Ground Black Pepper

Pour the beans into a strainer and give them a quick rinse with cold water. Put the onion and garlic into a large pot coated with olive oil. Cook for three minutes on medium heat, then add the beans. Add the spices and salt and cook for 2 minutes, letting the flavor get into the beans. Add the tomatoes and let it come to a boil, stirring often. Simmer for five minutes, then serve in bowls with a sprinkle of fresh parsley. Serves four.

INGREDIENTS
1 tablespoon vegetable oil
1 cup chopped onions
3/4 cup chopped carrots
3 cloves garlic, minced
1 cup chopped green bell pepper
1 cup chopped red bell pepper
3/4 cup chopped celery
1 tablespoon chili powder
1 1/2 cups chopped fresh mushrooms
1 (28 ounce) can whole peeled tomatoes with liquid, chopped
1 (19 ounce) can kidney beans with liquid
1 (11 ounce) can whole kernel corn, undrained
1 tablespoon ground cumin
1 1/2 teaspoons dried oregano
1 1/2 teaspoons dried basil
DIRECTIONS
Heat oil in a large saucepan over medium heat. Saute onions, carrots, and garlic until tender. Stir in green pepper, red pepper, celery, and chili powder. Cook until vegetables are tender, about 6 minutes.
Stir in mushrooms, and cook 4 minutes. Stir in tomatoes, kidney beans, and corn. Season with cumin, oregano, and basil. Bring to a boil, and reduce heat to medium. Cover, and simmer for 20 minutes, stirring occasionally.

** If you like it thick just omit most of the juices from any canned veggies you use..

Best Chili Recipe Ever!!!

1 tablespoon olive oil or canola oil
1 15 oz can of kidney beans
1 15 oz can of black beans
2 15 oz cans of whole or diced tomatoes
1/2 cup frozen corn
Any other veggies like peppers, carrot, broccoli, etc (optional)
1 medium onion, chopped
2 cloves garlic minced
2-4 tablespoons chili powder (depending on how hot you like it)
1/2 tablespoon oregano
2 bay leaves
any extra kind of chili spice
salt and pepper to taste


In a medium sauce pan, heat oil and saute onion and garlic and add half of the chili powder needed. If using other veggie add them now and let them cook for a few minutes, depending on what veggie. When the onions are transparent, add drained beans and 1 can and half of the other can of tomatoes. Add remaining spices and corn. Cook for 30-40 minutes and serve with cheese and raw onion!
