I luvv flatbread pizzas. . .with lots of red onions, sauce, turkey pepperoni/chicken breast strips, and a lil bit of low-fat cheese. . .oh and lots of olive oil!
i made pizza before with a variety of mushrooms:
1. i used balsamic vinegar instead of oil
2. grill portobello mushroom caps and dice them up. also, use dehydrated wild mushrooms (shiitake, wood ears, chantrelles, oyster, lobster, etc), but rehydrate in water first for 15-30 minutes and cut large shrooms into strips or smaller bits.
3. cheese is optional on pizza really. if you are a dairy eating vegetarian, use either shredded italian or goat cheese. if you like that fake soy stuff, while i think it would not melt properly, you could use that, but you really do not need it.
the classic puttanesca
a good XVO, garlic, anchovie, ripe olive, capers, light tomato sauce and chilies
Dried tomatoes, spinach or onions, caramelized onions (VERY GOOD), olives, mushrooms just about any type, pineapple, you can make a white pizza (no tomato sauce) use pesto or just garlic and oil, low fat cheese, or soy cheese.
Use canned biscuits and make mini pizzas per each biscuit. Use skim mozzarella cheese. Also, use tomato sauce. Add mushrooms, bell peppers, onions, olives, and sliced tomatoes as toppings.
When you fix rotini, add some chopped and already cooked brocolli. Then, season with a clove of garlic. Simmer the little bit of garlic in a frying pan with canola or olive oil.
Fix toasted sandwiches with cut up cucumber, sliced tomatoes, sliced or chopped onion and maybe even bell pepper. Mix the cucumber, tomatoes, and onions with italian dressing. Toast your bread separately. Put the veggie mixture on the toasted bread.
