Mushrooms and Barley!

I add a LOT of colorful peppers to make it a wholesome, nutritious meal.

The barley has the protein and fiber, so I will be full.
The mushroom have a meaty texture.
And the peppers add the rest of the nutrients.

Middle Eastern stew of chickpeas, potatoes and carrots is full of simple, uncomplicated flavor and just the one herb, thyme.
Itiakiet stew from Nigeria is rich and creamy. Served over rice. When I take it to work for lunch, I can hardly wait for noon.

I like couscous a bunch, but my favorite has to be

Road's End Organic's Shells and Chreese.

It's better than any mac and cheese I had before I was vegan, and ethical too!

really anything spicy/mexican/ and with beans, lol. as long as it's spicy and colorful, I'm good. Spinach enchiladas are the best!

i loveee vegan tacos! we make home made tortillas, spanish rice, beans, salsa, guacamole, and put cut up lettuce, jalapenos and black olives on top of it all. mmmm tacos :) i also love spaghetti squash in (vegan) pesto sauce or (vegan) pasta sauce. hmm i have a lot. i just love food! there are so many dishes that can be converted into veg*n meals. i like the dishes i listed above because they are healthy, vegan (of course) and they dont make me feel like an odd ball when i eat with the rest of my omni family.

I love being a veggie and I love food, so this is a hard one for me.
I have a great spinach lasagna recipe that I customized and it really knocks my socks off. I also like many different types of Mexican food - as long as it's hot and has tons of onions and beans, I'm great!

Vegetable Biriyani, hands down - and the spicier the better!

Spicy tofu because well...I just love the stuff. And also this Indian creamed spinich with tofu stuff, I forgot what it's called but its soooo good.
