Greek Pasta with Tomatoes and White Beans
INGREDIENTS
2 (14.5 ounce) cans Italian-style diced tomatoes
1 (19 ounce) can cannellini beans, drained and rinsed
10 ounces fresh spinach, washed and chopped
8 ounces penne pasta
1/2 cup crumbled feta cheese
DIRECTIONS
Cook the pasta in a large pot of boiling salted water until al dente.
Meanwhile, combine tomatoes and beans in a large non-stick skillet. Bring to a boil over medium high heat. Reduce heat, and simmer 10 minutes.
Add spinach to the sauce; cook for 2 minutes or until spinach wilts, stirring constantly.
Serve sauce over pasta, and sprinkle with feta.
Tofu Peanut Stir-Fry
INGREDIENTS
1 teaspoon vegetable oil
1 (16 ounce) package frozen stir-fry vegetables
1/2 teaspoon minced fresh ginger
salt and pepper to taste
2 eggs, beaten
1 cup cornstarch
salt and pepper to taste
1 (14 ounce) package firm tofu, drained and cubed
1/2 cup vegetable oil
3/4 cup peanut sauce
1/4 cup chopped peanuts
DIRECTIONS
Heat the oil in a large skillet or wok over medium heat, and cook the vegetables until tender. Mix in the ginger, and season with salt and pepper. Remove vegetables from skillet, and set aside.
Place the eggs in a bowl. In a separate bowl, mix the cornstarch, salt, and pepper. Dip tofu cubes first in the egg, then the cornstarch mixture to coat.
Heat the remaining oil in the skillet or wok over medium heat, and cook the coated tofu 5 minutes, or until golden brown. Stir in the peanut sauce and peanuts. Continue to cook and stir until sauce has thickened and tofu is well-coated. Serve with the vegetables.
Unsloppy Joes
INGREDIENTS
1 tablespoon olive oil
1/2 cup chopped onion
1/2 cup chopped celery
1/2 cup chopped carrots
1/2 cup chopped green bell pepper
1 clove garlic, minced
1 (14.5 ounce) can diced tomatoes
1 1/2 tablespoons chili powder
1 tablespoon tomato paste
1 tablespoon distilled white vinegar
1 teaspoon ground black pepper
1 (15 ounce) can kidney beans, drained and rinsed
8 kaiser rolls
DIRECTIONS
Heat olive oil in a large skillet over medium heat. Add onion, celery, carrot, green pepper, and garlic: saute until tender. Stir in tomatoes, chili powder, tomato paste, vinegar, and pepper. Cover, reduce heat, and simmer 10 minutes.
Stir in kidney beans, and cook an additional 5 minutes.
Cut a 1/4 inch slice off the top of each kaiser roll; set aside. Hollow out the center of each roll, leaving about 1/2 inch thick shells; reserve the inside of rolls for other uses.
Spoon bean mixture evenly into rolls and replace tops. Serve immediately.
Avocado Tacos
3 avocados - peeled, pitted, and mashed
1/4 cup onions, diced
1/4 teaspoon garlic salt
12 (6 inch) corn tortillas
1 bunch fresh cilantro leaves, finely chopped
jalapeno pepper sauce, to taste
DIRECTIONS
Preheat oven to 325 degrees F (165 degrees C).
In a medium bowl, mix avocados, onions, and garlic salt.
Arrange corn tortillas in a single layer on a large baking sheet, and place in the preheated oven 2 to 5 minutes, until heated through.
Spread tortillas with the avocado mixture. Garnish with cilantro and sprinkle with jalapeno pepper sauce.
Teriyaki Wraps
INGREDIENTS
1 cup uncooked long grain white rice
2 cups water
2 tablespoons olive oil
1 onion, chopped
1 red bell pepper, chopped
1 small zucchini, chopped
1 small yellow squash, chopped
1 1/4 cups teriyaki sauce
3 tablespoons soy sauce
2 teaspoons garlic powder
1/2 teaspoon salt
1 teaspoon ground black pepper
4 (10 inch) whole wheat tortillas
DIRECTIONS
In a saucepan bring 2 cups of water to a boil; add rice. Reduce heat, cover, and simmer for 20 minutes.
Heat olive oil in a large skillet over medium heat. Saute onion, bell pepper, zucchini, and yellow squash until onions are tender. Stir in the teriyaki sauce. When the vegetables are tender, stir in the cooked rice, soy sauce, garlic powder, salt and pepper. Simmer for 3 to 5 minutes.
Place 1/4 of the rice and vegetables in each tortilla, and roll up.
Pesto Pizza
INGREDIENTS
1 (12 inch) pre-baked pizza crust
1/2 cup pesto
1 ripe tomato, chopped
1/2 cup green bell pepper, chopped
1 (2 ounce) can chopped black olives, drained
1/2 small red onion, chopped
1 (4 ounce) can artichoke hearts, drained and sliced
1 cup crumbled feta cheese
DIRECTIONS
Preheat oven to 450 degrees F (230 degrees C).
Spread pesto on pizza crust. Top with tomatoes, bell peppers, olives, red onions, artichoke hearts and feta cheese.
Bake for 8 to 10 minutes, or until cheese is melted and browned.
Chana Masala is an excellent Indian recipe. It's even a vegan recipe.
You can try Vegetarian Times Magazine. excellent recipes. Good advice especially for new comer veggies! I have subscribed for 8 years now and helped me out when I first became a veg!
There are a ton of vegetarian recipes available on the Internet. I often find non-vegetarian recipes and just alter them to make them vegetarian (by replacing chicken breasts with Morningstar Farms Chik patties, by replacing hamburger meat with veggie crumbles, etc.). Here's what I made for dinner last night (I got the recipe from the back of the Chik Patties box):
Southwestern Skillet Supper:
-1/2 cup uncooked orzo pasta
-1 can (15 oz.) black beans, rinsed and drained
-1 cup frozen whole kernel corn (I used 1 can)
-1 cup thick and chunky salsa
-2.5 cups water
-1/4 tsp. hot pepper sauce
-1 package Morningstar Farms Chik Patties original, cubed
-2 tbsp. chopped cilantro
Direction:
1. Combine all ingredients excet Morningstar Farms Chik Patties and cilantro in 12 inch frypan. Cook over medium heat, stirring frequently, until mixture starts to boil. Reduce heat, cover, and simmer 20 minutes or until pasta is tender.
2. Stir in Morningstar Farms Chik Patties and cilantro. Continue heating 5 minutes longer or until patties are hot. Serve hot.
Serves 6.
It's one of my favorite vegetarian meals.
Black Bean Burgers
Ingredients:
1/2 onion diced
1 can black beans
2 slices of bread
1 tsp garlic powder
1 tsp onion powder
1/2 tsp seasoned salt
salt and pepper to taste
oil for frying
Directions:
1) sautee the onions till soft about 3-5 minutes
2) In a large bowl mash the beans until almost smooth and add all ingredients except oil. Add the flour a little bit at a time to combine well.
3) Form bean mixture into patties approximately 1/2 inch think and fry in a small amount of oil until slightly firm
I also know a good vegetarian lasagna recipe but I can't find it right now. If I do find it I will put it on.
