Vegetarian recipes for Kids Please!?

HI,

I have a 4 year old daughter that doesn't really like meat. She'll SOMETIMES eat some but rarely. I usually just try and make our regular meals (meat included) and just take the meat out of her portion. However since the meat is a large part of the nutriets in the meal im afraid she isn't getting enough protein/vitamins etc. I have spoken with her pediatrician and they said its fine that she doesn't eat meat as long as she is getting proper nutrients. I don't mind making her vegetarian meals but don't know a lot of toddler friendly vegie recipes. Any ideas would be great. She LOVES salad, tomatoes, peas, cheese, fresh fruits..veggies...she likes cooked onions..not raw.and nothing spicy or with a bold flavor. Thank you!

the important thing is to replace the protein she isn't getting
nachos/tacos with re fried beans instead of hamburger
make a veg soup and add a can of black beans for a thick
rich sauce
cheese pizza with her grilled onions
a baked potato, surrounded by broccoli and cauliflower
covered with a creamy mild cheddar cheese
grilled cheese sandwich with a slice of cold tomato added
after
my kids also love a pile of mushrooms fried in butter to re-
place a steak
they even love re-fried beans and cheddar cheese on a
hamburger bun

try giving her celery cut in half with peanut butter dwn the middle, its a tasty treat and high in protein

I don't have the recipe with me... you can make cheese soup with lots of veggies in it (any kid will eat veggies that taste just like cheese). Make sure she eats lots of greens for iron and calcium.

Make her pizza toasts. Spread toasted bread with tomato puree and herbs. Top with grated cheese and whatever veggies your daughter likes. Toast cheese under the grill and serve with a fresh salad-cheap, tasty and healthy!

Also, make her smoothies by blending fruits with yoghurt.

umm... I am a vegitarian also.. actually my whole family is vegetarian. You can make cereal for breakfast, a burger without the meat (just like tomatoes, cucumbers, lettuce, and salt, etc.), and macoroni and cheese for dinner. Well you can make some more meals I think.

Good for you! I wish my mom had been as receptive. Instead I kept getting ham and cheese sandwhiches in my lunch everyday so all I ate for lunch was the juicebox, and carrot sticks. Not so filling... There are lots of good vegetarian cookbooks out there, but you're a busy mom I'm sure, and its so much easier to just make what you normally would and subtract the meat, or add such a minimal amount that its undetecable. Slice up some veggies and cheese and serve them with a hummus dip, or a roasted red pepper dip, or just good old ranch dressing. Make bite size sandwhiches full of veggies and cheese. Vegetable soup with pasta and beans is pretty good. Beans are a good source of nutrients so you could attempt some mexican food as well. Make some tostadas or tacos with either whole or refried beans, shredded cheddar cheese, lettuce and tomato. Sorry I'm not more of a help, but its so easy to just make whatever you normally would and just leave out the meat. Will she eat fish? That is a great source of nutrients and not as sharp tasting as other meats or as heavy.
